Air Fryer Empanadas

Air Fryer Empanadas are the answer snack time or anytime! Made with flaky pie crust, savory beef filling, and cheese you will find yourself making batch after batch.

There’s nothing better than a great recipe to have in the back of your pocket for nights when you just want some comfort snack foods that don’t take too much effort. Good thing I’ve got this ground beef empanada recipe for just those kinds of nights!

The great thing about this air fryer beef empanada recipe is that you don’t use all of the ground beef for the initial preparation. What I do is freeze the additional beef that’s leftover so I can make these again without having to remake all the meat.

Bonus, you can freeze storebought pie crust. Grab them when they are on sale so when you want to whip these up, the beef and the crust are already in my freezer. I just put both items in the refrigerator to thaw the night before and it’s HELLO snack time the next night!

The beer: Dirty Blonde from Atwater Brewery.

You will see this beer in many of my posts because it just happens to be 1) my favorite, 2) a perfect example of blonde ales because it can literally be paired with any dish.

How to make Empanadas in the Air Fryer:

The key to making this empanadas recipe is to KEEP IT COOL.

  • Make sure the ground beef has cooled completely before using it.
  • Roll out one sheet of pie crust at a time, keep the other one in the refrigerator and only remove when ready to cut the circles out.

Start by browning the ground beef. Cook over medium/high heat on top of the stove. When the beef is halfway cooked, add the garlic powder, black pepper, chili powder, and cumin.

Once the ground beef is cooked all the way through and no longer pink drain the grease from it and add to a bowl. LET IT COOL COMPLETELY.

When the beef has cooled, remove one of the pie crusts from the refrigerator to start cutting out the circles.

On a piece of wax or parchment paper add a small amount of flour and roll the pie crust out onto it.

Using a glass or biscuit cutter cut out 7-8 circles.

There will be remaining dough. Pick it up and roll it together into a ball.

Using the same glass, roll the dough out into a circle again and cut additional circles. I can usually get 11-12 circles of dough out of each crust.

Add the cooled ground beef and shredded cheese onto one half of the pie crust circle. *Any additional ground beef that is leftover put into a freezer-friendly container and freeze for up to a month. To thaw, put in the refrigerator 24 hours before use.

Steps for how to fold empanadas..

The best way to make sure that they seal and you don’t make a mess of the air fryer basket, pinch the edges then fold the edges over. Crimp the folded edge with a fork.

Spray the bottom of the air fryer basket with spray vegetable oil. Add the prepared empanadas to the basket. Spray the tops with additional oil or brush with melted butter (this is my favorite way to make them but spray works well too).

Set the air fryer to 350 degrees and fry for 8 minutes. With a fork, gently flip each one. Spray again with oil or brush with butter and fry for 1 more minute.

Remove the empanadas from the basket and continue the process until they are all made, should take about 3-4 times. Keep the already made ones warm in the oven or eat as you make them!

Serve these with sour cream and salsa. And here you are……

How has your winter been going? Surprisingly we have been having pretty mild weather. That doesn’t mean though that it hasn’t been cold. While the -20’s from last year haven’t hit yet, we have consistent 30-degree bundle up weather. For this Mitten Movie Night, I am finishing up the 4th season of Schitt’s Creek. This is easily one of the funniest comedies I’ve seen in a long time. Right up there with my favorite show 30 Rock. It’s a binge-able show, perfect for when you’re stuck in the house.

What beer goes well with a hearty soup recipe?

The beer: Amber Ale from Bell’s Brewery

While everyone is enjoying Hopslam, I am pairing this year-round Bell’s offering with everything from hearty soups to turkey sandwiches.

How to make Bacon Cheeseburger Soup:

Start by cooking the ground beef and the bacon. Slice the bacon into small strips and add to a stockpot with the ground beef.

Cook the beef and bacon over medium/high heat for about 10 minutes, until the beef is browned and bacon is cooked through and crispy.

While the meat is cooking chop the potatoes, carrots, onions, and celery. Mince the garlic.

Remove the pot and drain 90% of the grease, leaving around 1 Tbs in the beef mixture. Then add flour. Stir to combine everything.

Now add the tomato paste. I like this soup with a tomato base if you prefer it less so decrease the tomato paste by 3 ounces. It will not have anything to do with the thickness.

Over medium heat add the stock, herbs and spices, sugar, and vegetables.

Cover the pot and cook the soup for an additional 30 minutes.

How To Make Croutons in the Air Fryer:

Cut any bread you like into cubes. I used day-old butterfly rolls from my store bakery. This recipe made about 2 cups of croutons.

Add the cubes of bread to a bowl then drizzle with 2 Tbs. olive oil, 1 tsp parsley flakes, 1 tsp garlic powder, salt and pepper to taste.

Add the bread to the tray of the air fryer. Set air fryer to 390 degrees and air fry for 10 minutes, flipping the croutons halfway through.

They come out so crunchy but not hard and full of flavor. Perfect on top of soups like this or salads.

Once the soup has cooked add the finishing touches to thicken it up. In a small bowl add 1 Tbs flour, 1/4 cup milk and salt and pepper to taste. Stir to combine and pour to the soup pot.

Add the shredded cheese and pickles. The pickles are optional of course, you can always leave them out and let people add their own.

Serve by sprinkling with more cheese, diced tomatoes, more pickles, and croutons. And here you are……

We have been busy around here lately. School, sports, work, etc. and everything in between so why not add even more to our plate? Enter a new addition to the family.

So for this Mitten Movie Night instead of recommending a movie, I want to introduce you to Titan.

We have been in discussions about getting a puppy for some time now but once we saw his little face, we knew we didn’t want to wait any longer.

Titan was one of a litter that my husband found through Paws Of Hope in Stevensville, MI. They were so great to work with and I would highly recommend them if you are in the area and interested in adding a new member of your family.

What beer goes well with Instant Pot No Bean Beef Chili?

The beer: Spaten Oktoberfest.

Yes, I know it’s no longer October but this beer is something I purchased extra of in October because it’s great to use in recipes and a light drinkable beer to have on hand for guests who don’t particularly like IPA’s.

I chose to make a beanless chili recipe because I wanted a chili recipe that would also double as a great way to use up a bag of tortilla chips that had been hanging around my cupboard.

Let’s start by talking about the ideal meat to use in the Instant Pot. I picked up this 2-pound eye of round roast from the store. With the marbling on it, I just knew it would be great. Just like when we smoke meat I’ve noticed that the more fat content meat has in it, the more tender it gets.

How to make Instant Pot No Bean Beef Chili:

Prepare the ingredients that will go into the Instant Pot. Cube the meat, chop the onion and garlic, and handle with care when seeding and chopping the jalapeno.

Should you add jalapeno to your chili?

Yes! I really like jalapenos and find that they just heighten the taste of everything from pasta to burgers.

Set the Instant Pot to saute and add 1 Tbs olive oil to the bottom. Add the cubed roast to the pot and brown on both sides using tongs to turn the meat, around 2 minutes each side.

Steps and instructions for making Instant Pot No Bean Beef Chili

Turn the Instant Pot off. To the browned beef add the canned tomatoes, tomato paste, onion, garlic, jalapeno, sugar, flour, and spices.

Finally, add the bottle of beer and stir everything together one more time.

Place the lid on the Instant Pot until you hear the ‘good to go’ dings. Make sure the lid valve is pointing at ‘sealing’. Set the Instant Pot to the ‘Meat/Stew’ setting and set the timer for 45 minutes.

Once the 45 minutes are up, let the pressure come down naturally for 10 minutes. Turn the valve to venting to release any further steam then open the lid.

The Instant Pot spends around 10 minutes building up the pressure and then another 10 minutes to bring the pressure down before taking the lid off. Make sure to factor this additional time for serving this instant pot chili.

I served this beanless chili with tortilla chips, sharp cheddar cheese, white onion, and sour cream. These toppings helped to cool down the jalapeno and add even more flavor.

Baked Meatballs

These delicious Baked Meatballs make the perfect addition to pasta night! Ground beef, Italian sausage, Parmesan and mozzarella cheese with fresh basil mixed together then form little balls of goodness that are baked, not fried.

I want to say that I make these meatballs every time I make pasta. It would be great to say, ‘This is a beloved recipe that my grandmother handed down to me.’ But I want to be honest with you, so I will. I just started making this recipe exactly one month ago.

While baking meatballs is my preferred way to make meatballs, I didn’t have a good recipe that went with spaghetti sauce. The usual grainy, bland and just plain yuck meatballs that I quickly make don’t leave any impression at all. Except for my 5-year-old, he LOVES spaghetti and meatballs, so for him, I felt like I really needed to up my game.

After playing with a few different versions, this baked meatball recipe was by far the best and little kidapproved!

So what made the difference from these and the other meatballs I had made before?

What I had run across before was when I used breadcrumbs for the meatballs, they came out mealy. Soaking the breadcrumbs in milk before mixing them into the meat totally solved this problem. Soak the 1/2 cup of breadcrumbs in 1/4 cup milk for 5 minutes before adding the other ingredients.

What is a good meat mixture for making baked meatballs?

Prior to this, I was just using ground beef. Boring! So I added half ground beef (80/20 mixture) and half Italian sausage. No longer boring.

After soaking the breadcrumbs, preheat oven to 350 degrees.

In the bowl with the soaked breadcrumbs add the two cheese, egg, seasoning, garlic, and chopped basil.

Add the two types of meat then form into 1 to 2-inch balls. I like them on the smaller size and this recipe makes about 35 meatballs. Place them on a baking sheet lined with parchment paper.

Bake the meatballs for 30 minutes and serve with cooked pasta and your choice of sauce. I love Trader Joe’s Red Lentil pasta and traditional sauce. And here you are…..

Just a few ingredients turn ordinary loaves of French bread into this wonderful lasagna/pizza bread hybrid. Lots of sauce, lots of cheese and so toasty on top. Everyone will love this Lasagna French Bread.

Growing up french bread pizzas from the freezer section were one of mine & my brothers favorites! Now that I’m the cook in the house I skip the freezer section and make my own French bread right at home.

What beer pairs well with Lasagna French Bread and a movie?

The beer: Lager from Simpler Times.

We pick this beer up at Trader Joe’s. It tastes great and is a great value at less than $5 for a 6-pack.

Is Trader Joe’s a great place to buy beer?

Yes! Not only do they have a great selection of beers, they also let you taste anything you want before buying.

What movie pairs well with crunchy french bread pizzas and a cold beer?

For this Mitten Movie Night we are starting Harry Potter from the very beginning. We are heading to Florida in a few weeks and visiting Universal Studios while there.

This will be Little A’s first time going when he can actually enjoy everything there. He wasn’t even 2 the last time we went so I’m excited to get him into the movies so he will understand just how cool that part of the park is.

How to make Lasagna French Bread:

In a pan brown the ground beef until cooked through, drain the grease.

To the same pan add onions and garlic. There should be grease still in the pan, if not add a small amount of olive oil. Lightly brown then add the ground beef back to the pan. Now add the spaghetti sauce and cook until warmed through and all mixed together.

Cut the French bread loaves in half and removing some of the bread in the center.

Tips for making great french bread:

  • Removing some of the bread in the center makes a
    shallow area for adding the cottage cheese fillings. Makes it so much easier to eat!
  • Brush some melted butter and garlic on the bread to give it a ‘garlic bread’ feel.

Preheat the oven to 375 degrees.

On a baking sheet lay down some parchment paper. Place the cut bread on top.

In a small bowl mix together the cottage cheese and beaten egg together. Place the mixture into the wells of the bread.

Spread the ground beef mixture on the top of the cottage cheese mixture evenly over the 4 slices of bread.

Finally spread the shredded cheese on top.

Place in the oven and bake for 20 minutes until cheese is golden and bubbly.

With the holidays behind us, I was ready to just relax on this Mitten Movie Night and make something super easy. These Fiesta Fries were on the table in less than 20 minutes and took ALL THE STUFF I LOVE IN TACOS and loads it on top of crispy french fries.

What TV show pairs well with loaded french fries and beer?

I am on the third episode of Escape At Dannemora. If you are into compelling dramas that are based on actual events, then this show is for you.

Patricia Arquette’s character is really one of the most complex I’ve seen in a long time. You want to hate her. You want to feel sorry for her. I can see why she’s up for awards for this role.

What beer pairs well with Fiesta Fries?

The beer: Tiny Bomb American Pilsner from Wiseacre Brewing Co.

We purchased this while we were on our trip to Nashville in November. This beer was very similar to my favorite type of blonde ale just slightly less sweet. Gave me a serious summertime vibe even in the middle of winter.

Like most people, I’m sure either you asked for an Instant Pot or an Air Fryer for Christmas this year. I asked for the later and have to admit I am so happy I did! For this recipe, I used it to make my fries nice and crispy.

How do you make crispy french fries in the air fryer?

According to my air fryer users guide frozen french fries should be cooked at 400 degrees for 15 minutes.

I used this as a start but went 10 minutes at 400 degrees, taking out the basket and shaking, then cooking for another 10 minutes. They turned out perfect! (Fries go great with PB&J Burgers, Michigan Hot Dogs or Roast Beef Sandwiches)

How to make Fiesta Fries:

Next, make the beef with green chili enchilada sauce for the topping on the fries.

Start by browning 1 pound of 80/20 beef with 1/4 cup green onions. Save the green ends for garnish. 

Once the beef is cooked all the way through add the green chili enchilada sauce. Heat through.

For the toppings, I made avocado ranch dressing, cheese, tomatoes, the rest of the green onions, and jalapenos. I then drizzled with taco sauce. It worked so well with the cooling effect of the avocado ranch.

The nice thing about these fries is that they are PERFECT for parties, especially the Super Bowl coming up. Set everything up and let guests load them up as they like.

Fiesta Fries have green chili enchilada beef, avocado ranch dressing, and spicy taco sauce piled on top of crispy french fries.

Instructions
  1. Make the french fries according to package directions or made to air fryer specifications.
  2. Brown 1 pound of 80/20 beef with 1/4 cup green onions. Save the green ends for garnish.
  3. Once the beef is cooked all the way through add the green chili enchilada sauce. Heat through.
  4. Top with avocado ranch dressing, cheese, tomatoes, the rest of the green onions, and jalapenos. Drizzle with taco sauce. Enjoy!
