Most often when I am thinking of recipes to make, I think ‘What can I make a sandwich out of?’ A close second is, ‘What can I put buffalo sauce on?’ Like these buffalo ranch chicken tacos. Well, look at the stroke of genius I created here! The best of both worlds. An easy sandwich that is so saucy and full of spicy flavor.

What beer should you pair with these buffalo sloppy joes?
The beer: Yuengling
This is one of my favorite go-to beers for when I have a spicy main dish. It is simple and refreshing and a perfect way to cool down your mouth after taking a bite of the spicy sloppy joe filling in these sandwiches.
How should you serve homemade sloppy joes?
I like to serve these sloppy joes bar styles where you use bakery-fresh rolls that have been split in two, with bowls of ground turkey, avocado salad, blue cheese dressing, and blue cheese crumbles next to them. Let guests build their own sandwiches as they like.
Ingredients
This easy sloppy joe recipe has-
- Cooked ground turkey. Saute with garlic and butter.
- Prepared buffalo sauce, blue cheese dressing, and ranch dressing. Makes the sauce both spicy and creamy.
- Blue cheese dressing and blue cheese crumbles for topping.
- Avocado and tomato salad that is spread on the top bun right before serving.

How to make this buffalo sloppy joe recipe step-by-step
For this sloppy joe recipe, you can use ground turkey or ground chicken. For this one, I used ground turkey.
Start by sauteeing the ground turkey in a medium-sized skillet over medium heat. Drain any grease or liquid that may release.
To the cooked turkey, add minced garlic and 1/2 tablespoon of butter. Cook to melt.
Turn the heat off to the pan BEFORE adding the sauces. The ground turkey is heated enough it will heat the sauces and you will avoid the sauce spices from bothering your eyes.
Add the buffalo sauce, blue cheese dressing, and ranch dressing.
Stir to combine and make sure all the ground turkey is covered in the sauce.
Make the quick avocado guacamole by mashing a whole avocado. Dice a Roma tomato. Mix them together in a bowl.
Take the bakery hamburger bun and top it with the buffalo sloppy joe mixture. Drizzle with blue cheese dressing. Top with crumbled blue cheese.
Spread the guacamole on the top bun and place it on top.
Tips & Variations
- Use ground chicken for this recipe instead of ground turkey.
- Make a homemade blue cheese dressing like this one from Domestic Superhero.
- Steam the hamburger buns in the microwave in a plastic bag (remove any wire or plastic fasteners) for 30 seconds.
Storage
Add the leftover sloppy joe filling to a covered container and refrigerate. Eat within 3 days. Reheat in the microwave or in a pan on the stovetop.
For the guacamole salad add it to a small container. Place a piece of plastic wrap over it and push it down until it is directly over the top of the salad. Cover with a lid and refrigerate. Eat within 3 days.
Freezing is not recommended for this recipe.

Buffalo Sloppy Joes {with Blue Cheese}

Ingredients
- 6 hamburger buns
- 16 ounces ground turkey
- 1 teaspoon minced garlic
- 1/2 tablespoon butter
- 1 cup buffalo sauce
- 1/2 cup blue cheese dressing divided
- 1/4 cup ranch dressing
- 4 ounces blue cheese crumbles
- 1 ripened avocado mashed
- 1 Roma tomato diced
Instructions
- Cook the ground turkey until it is cooked through and no longer pink. Drain any grease,16 ounces ground turkey
- Place the pan with the meat back onto the stove and add the garlic and butter. Cook until the butter has melted.1 teaspoon minced garlic, 1/2 tablespoon butter
- Turn off the heat.
- Add the buffalo sauce, blue cheese dressing, and ranch dressing. Stir the sauce together with the ground turkey to combine.1 cup buffalo sauce, 1/4 cup ranch dressing, 1/2 cup blue cheese dressing
- Cut the avocado in half and remove the skin and pit. Add to a bowl and mash the avocado.1 ripened avocado
- Dice a Roma tomato and add to the avocado in the bowl. Mix to combine.1 Roma tomato
- Place the buffalo sloppy joe mixture to the bottom bun. Top with blue cheese dressing and blue cheese crumbles. Add the avocado salad to the top bun. Enjoy!6 hamburger buns, 4 ounces blue cheese crumbles

Tips for making this recipe:
- This recipe can be made with either ground turkey or chicken.
- Make sure to turn the heat off to the pan BEFORE adding the buffalo sauce to avoid the spiciness from bothering the eyes.
