This Bacon Cheeseburger Soup will have you eating your burger with a spoon. Ground beef, bacon, a creamy tomato base, cheese and yes, even pickles! Add chunky pieces of potatoes to make it even heartier and top with homemade croutons.
How has your winter been going? Surprisingly we have been having pretty mild weather. That doesn’t mean though that it hasn’t been cold. While the -20’s from last year haven’t hit yet, we have consistent 30-degree bundle up weather. So I try to keep warm, comforting soup recipes like this Bacon Cheeseburger Soup on the stovetop to keep warm.

What beer goes well with a hearty soup recipe?
The beer: Amber Ale from Bell’s Brewery
While everyone is enjoying Hopslam, I am pairing this year-round Bell’s offering with everything from hearty soups to turkey sandwiches.
How to make Bacon Cheeseburger Soup:
Start by cooking the ground beef and the bacon. Slice the bacon into small strips and add to a stockpot with the ground beef.
Cook the beef and bacon over medium/high heat for about 10 minutes, until the beef is browned and bacon is cooked through and crispy.
While the meat is cooking chop the potatoes, carrots, onions, and celery. Mince the garlic.
Remove the pot and drain 90% of the grease, leaving around 1 Tbs in the beef mixture. Then add flour. Stir to combine everything.
Now add the tomato paste. I like this soup with a tomato base if you prefer it less so decrease the tomato paste by 3 ounces. It will not have anything to do with the thickness.
Over medium heat add the stock, herbs and spices, sugar, and vegetables.
Cover the pot and cook the soup for an additional 30 minutes.
How To Make Croutons in the Air Fryer:
Cut any bread you like into cubes. I used day-old butterfly rolls from my store bakery. This recipe made about 2 cups of croutons.
Add the cubes of bread to a bowl then drizzle with 2 Tbs. olive oil, 1 tsp parsley flakes, 1 tsp garlic powder, salt and pepper to taste.
Add the bread to the tray of the air fryer. Set air fryer to 390 degrees and air fry for 10 minutes, flipping the croutons halfway through.
They come out so crunchy but not hard and full of flavor. Perfect on top of soups like this or salads.
Once the soup has cooked add the finishing touches to thicken it up. In a small bowl add 1 Tbs flour, 1/4 cup milk and salt and pepper to taste. Stir to combine and pour to the soup pot.
Add the shredded cheese and pickles. The pickles are optional of course, you can always leave them out and let people add their own.
Serve by sprinkling with more cheese, diced tomatoes, more pickles, and croutons. And here you are……

- 1 pound ground beef I use 80/20
- 12 ounces bacon sliced thin
- 6-8 yellow potatoes cleaned and cubed
- 2-3 celery stalks chopped
- 2-3 carrots skinned and chopped
- 1 small yellow onion chopped
- 3 garlic cloves minced
- 2 Tbs all purpose flour 1 Tbs at the beginning, 1 Tbs to thicken soup at the end
- 6 ounces tomato paste
- 6 cups beef or vegetable broth
- 1 tsp Worcestershire Sauce
- 2 tsp granulated sugar
- 1/4 tsp ground mustard
- salt and pepper to taste
- 1/4 cup whole milk
- 1/2 cup sharp cheddar cheese, shredded plus additional for topping
- 1/2 cup mild cheddar cheese, shredded plus additional for topping
- 3 dill pickle spears chopped, plus more for topping
- diced tomatoes for topping
Instructions
