Creamy homemade sausage gravy is the perfect sauce for breakfast pizza. Finish with cracked eggs and bake until over easy.
It doesn’t have to take a lot of time to make a meal that includes some of the best parts of a great breakfast: over-easy eggs, savory sausage gravy, lots of cheese, and all the carbs you can handle.

The key to this pizza is focusing on the homemade sausage gravy and using pre-made rectangle pizza dough so you don’t have to wait for the dough to rise. This way, you can have a slice of one of the most perfect foods on the planet on your breakfast table in 30 minutes.
Ingredients
This easy homemade sausage gravy breakfast pizza with eggs has-
- Pre-made pizza dough. This saves so much time. You can either use round crusts or the tubed rectangular pizza crust that is in the grocery store, usually by the crescent rolls or biscuits.
- Cooked pork breakfast sausage thickened with flour and milk, then spices added. This makes a thick sausage gravy that spreads nicely over the pizza crust.
- Shredded cheese. I like Colby jack, but you could use cheddar cheese or even pepper jack cheese for a little kick.
- Eggs cracked over the top. Depending on how long you choose to cook the eggs the yolk can come out yolky, medium, or hard.
- Chopped green onions and a sprinkle of black pepper. You know because we should add some veggies at least.
How to make thick homemade sausage gravy step-by-step
In a large skillet, saute and brown the sausage over medium heat until no longer pink. Takes around 5-6 minutes. *Do not drain the grease, this will be used to make the gravy.
Sprinkle 2 Tbs over the top of the sausage and stir.
To the pan, add 2 cups of milk. Add the seasonings and stir everything together.
Let the gravy simmer until it reduces by a third, for about 5 minutes. *You want it to be thick and creamy, not saucy which will make the whole pizza soggy.

How to make this breakfast pizza recipe
Preheat the oven to 400 degrees.
On a large sheet pan add parchment paper. Unroll the pizza crust and roll it out on top of the parchment paper so it is the size of the baking sheet.
Bake in the oven for 6 minutes.
Add the sausage gravy to the top of the crust. Spread around to every edge.
Spread the cheese over the top evenly.
Create 6 wells on the top of the pizza then gently crack an egg into each well.
Sprinkle with the chopped green onions.
Place the pizza into the oven and bake for 15 minutes.
Tips & Variations
- Adjust the time for pre-baking the crust by 1 minute for how you prefer your eggs on top. For mine, I pre-baked the crust for 6 minutes, then baked it with the eggs on top for 15 minutes and the eggs came out over-easy.

Storage
Add the remaining pizza to a covered container and refrigerate. Eat within 3 days. Reheat in the microwave or in the oven or air fryer at 375 degrees for 4 minutes.
It is not recommended to freeze breakfast pizza.

I would say that while I have seen a few recipes online for slow cooker pizza, I do not know how well the eggs would set in the crockpot.

I think it would be perfectly fine to make the gravy beforehand. I often have leftovers of this pizza and they reheat beautifully so I would think that making the gravy the day before would work well too. I hope you enjoy it, thank you, Diana!
