Sausage Wrapped in Cinnamon Rolls

Looking for an easy breakfast or after school snackSausage Wrapped in Cinnamon Rolls with drizzled icing uses only two ingredients and will have kids and adults raving.  Pre-cooked sausage and pre-made cinnamon rolls get breakfast or snack time wrapped up within 15 minutes.

I made these with my 12-year-old in mind.  Like most kids his age I’m sure, he always comes home from school starving! Like, eat us out of house and home starving.  I feel like sometimes I’m letting him down with no real good alternatives to ‘grab a yogurt’.

Since he loves to dip sausage into his syrup anytime I make my Swedish pancakes or even Pigs In a Blanket, it seemed like this recipe would be a no-brainer.  Sweet cinnamon rolls wrapped around savory sausage then baked to perfection and drizzled with icing. Yes, it did go over just as expected. He loved them.

Not only is this breakfast really easy, but it can also be made in several different ways. Using different sausage and cinnamon roll combinations you can really change it up.

What combinations of cinnamon rolls and sausage work well together?

  • Turkey Sausage wrapped in Orange Rolls with Orange Icing
  • Maple Sausage wrapped in Pumpkin Spice Rolls with Pumpkin Spice Icing

How to make Sausage Wrapped in Cinnamon Rolls:

Preheat the oven to 400 degrees.

Place parchment paper on a large cookie sheet.

Lay the cinnamon rolls out on the top half of the pan and set the icing off to the side.

Open the package of pre-cooked sausage.

Unroll the cinnamon roll then starting at the top of the sausage link, start wrapping the dough around it.

Place the wrapped sausage back on to the cookie sheet.

Continue with the rest of the rolls.

Bake at 400 degrees for 15 minutes.

Take out of the oven and drizzle with the icing that comes with the cinnamon rolls.

Instructions
  1. Preheat the oven to 400 degrees.

Tuscan Quiche

Who doesn’t love a quick & easy breakfast?  I know I do.  Quiche is one of my all-time favorite dishes to turn to when I’m wondering what to make.  Need a nice breakfast for the weekend?  Make a quiche! Need to make a weeks worth of breakfast for easy weekday mornings?  Make a quiche!

What makes a quiche such a great breakfast?

One word: versatility.

While I kept this quiche simple, the flavor combinations are endless especially when you are using BLENDABELLA Portabella Mushroom Blends.  Start with the basic recipe of crust, milk, and eggs then create away! Here are a few examples:

  • For this Tuscan Quiche, add some sweet Italian sausage to the mix.  
  • Use Zesty Mexican BLENDABELLA to make a southwest quiche with chorizo and Swiss cheese.
  • Coconut Thai BLENDABELLA would make a great seafood quiche with cooked shrimp and a smoky mozzarella. 

How to make the perfect Tuscan Quiche with BLENDABELLA:

Pre-heat oven to 375 degrees. In a greased 8-inch pie plate add a thawed, prepared pie crust.  In a bowl whisk together the eggs, milk and BLENDABELLA Rustic Tuscan Portabella Mushroom Blend.

To the mixture add the cheese.  Pour into the pie crust.  Add the pie plate to a larger baking sheet in case it overflows (it shouldn’t but it doesn’t hurt to be prepared).  Bake for 40 minutes.

Test the quiche with a toothpick or knife to make sure it comes out clean. Let the quiche cool for 10 minutes.  Cut into eight pieces and here you are…..

Do you love making big breakfasts during the weekend?  Or like to make a breakfast casserole on Sundays so there are plenty of leftovers for weekday mornings?  If you say ‘yes’ to either of those then this Sausage Hash Brown Casserole is for you!

This casserole is loaded with potatoes, sausage, cheese, eggs and a special ‘secret ingredient’. This stick to your ribs recipe is made for a crowd or even better as leftovers.

I first had this dish while staying the weekend with my family up in Muskegon.  It was such a great weekend visiting with family and lots of great food.  On Sunday morning, we woke up and my stepmom made a big breakfast and the main dish was this sausage hash brown casserole.  It was so good!

While I was gobbling it down I asked her what was all in it so that I could make it once we got home.  She said the first few ingredients which were a given: hash browns, sausage, cheese….but then she said ‘french onion dip’.  What?  You mean like chip dip?  Yes!  Even though it’s not something that I would have thought of, I now can’t imagine a savory breakfast casserole that isn’t a combination of creamy sour cream and french onion dip.  Now on to the breakfast casserole recipe!

How to make Sausage Hash Brown Casserole:

Start by defrosting the hash browns according to the package directions.

While the hash browns are thawing, in a pan on the stovetop cook the breakfast sausage and onions until cooked all the way through.  Should take around 8-10 minutes.

Remove the sausage from the pan and place on a plate with a few paper towels.  Depending on how fatty your sausage is there may be grease that needs to drain off.

Ingredients and steps for making Sausage Hash Brown Casserole.

Preheat the oven to 350 degrees and grease a 9×13 dish.

Next in a bowl whisk the eggs, milk, salt, pepper, and Spanish paprika. In a large bowl add the container of sour cream and french onion dip. Stir to combine.

Now add the thawed hash browns to the bowl followed by the egg mixture.

Finally, add all but 1/2 a cup of the cheese to the bowl.

Stir it all together so that everything is all combined well.  Add it to the prepared pan and spread it evenly.  Sprinkle with the remaining cheese on the top.

Cover the pan with tin foil then cook for 50 minutes.

Cut into 12 pieces and serve with a big bowl of fruit, biscuits, and jelly.

Tips for making Sausage Hash Brown Casserole:

  • Do not skip defrosting the frozen hash browns. If you try to cook them frozen your casserole will take about…5 hours to cook.  Now if you are having a really lazy Sunday then fine but you would probably have all your coffee drank by then and what fun is that?
  • Need this recipe for an even bigger crowd?  Double the batch and bake in a large foil 20×12 baking pan.  Add 20 additional minutes to baking time.

Are you a breakfast eater?  I am not really.  I prefer to get up and have my coffee then maybe eat an early lunch.  However, on the weekends it’s a different story.  Weekends are for big breakfasts with the family on Sunday.  Eggs, bacon, pancakes, french toast or omelets.  This Ham & Spinach Breakfast Sandwich is the perfect balance of eggs and ham, chewy ciabatta bread and one of my favorite condiments, pesto.

The pesto is really what made this sandwich great.  I’ve been growing basil out in my back yard for a few years now so it’s pretty much a staple in our house.  Don’t have fresh basil?  I find that the store version is good too so don’t get overwhelmed with an extra step if you don’t want to.  The other good thing is that this sandwich can be made all in one pan.

This recipe is based off a sandwich I had when my husband and I took a little trip to Toledo & Cleveland last year.  While there we stayed at a beautiful hotel, the Hyatt Regency Cleveland at the Arcade.  It was a great hotel right across from all kinds of restaurants, shops, and a really cool brewery.  It was a great trip! We visited the Rock & Roll Hall of Fame and my favorite, The Christmas Story House!  I also got to eat a great breakfast sandwich in the hotel restaurant, this Ham & Spinach Breakfast Sandwich.  Now on to the food!

How to make a Ham & Spinach Breakfast Sandwich:

Heat up 1 tsp of oil then add the onion.  Let soften for 2-3 minutes stirring so they don’t burn.

In a bowl combine the eggs and milk and whip to combine.  Now add spinach to the pan.  Cook for about a minute to let it soften.  Add the eggs on top.

Using a spatula thin out the eggs and cook by pushing the bottom up and letting the egg run under.  Cook for about 2 minutes then flip.  Now add ham to the other side of the pan.

Heat through for 2 minutes while the other side of the egg cooks.  Put ham on top of the eggs.  Take the 2 pieces of bread and spread butter on them then place face down in the open section of the pan.  Let brown for about 1 minute.

Now time to plate it.  Place 1 piece of bread browned side down.  Put stacked eggs and ham on top of it.

Add a generous amount of prepared or freshly made pesto to the other slice of bread and put on top.

Strawberry & Sesame Hand Pies

Flaky crust packed with sweet strawberry preserves and Simply Sesame.  Make up a batch for the busy school week. My son ate these every morning and then again as a snack after school!  Who doesn’t love a portable meal that is a hit with the kids?

These hand pies are so easy to make and use just a few ingredients.  And let me tell you what made these even easier….my new mixer that I got for Christmas! It’s so beautiful.  Since getting it I’ve done some serious baking.  Enough of the admiration let’s get baking.

Starting with the dough add the ingredients to a mixer.  Or you can mix this by hand as well~before I got my mixer I had no problem whipping up crust for my favorite homemade pizzas.  Check out my directions for a thicker crust on my White Chicken Pizza with Basil & Blackberry Sauce.  A thinner crust for this Pepper Steak Pizza. Or a the crust for a classic favorite, Chicago Deep Dish Pizza.  Either way, this crust turns out perfectly! I’m even using this same recipe to make a special treat soon for Mitten Movie Night.  When the dough has been mixed roll into a ball then onto some plastic wrap that has been lightly floured.  Put the dough into the refrigerate for 1 hour.

Once chilled it’s time to roll it out and cut into circles.  See my fancy cutter!  This was enough dough for 12 pies.  Take a spoonful of the strawberry preserves and place on one side of the dough then on top of that add the Simply Sesame (*note: Simply Sesame needs to be well stirred to make sure it’s not too runny).

Preheat the over to 375 degrees then line a pan with parchment paper.  Fold the top of the dough over then crimp the edges with a fork.  Some filling may eek out when baking that is why it’s crucial to use the parchment so you can have easy clean up.

Bake for 20 minutes.  Before the last 10 minutes is up melt a tablespoon of butter, take the pies out then brush the tops.  Put back into the over to finish.  When done please be aware not to take a giant bite right away since the filling can be H-O-T!  And here you are….

Swedish Pancakes with Brown Sugar Bananas #SundaySupper

Tangy, thin Swedish Pancakes are cooked up and piled high ready for the breakfast table. Make a delicious mixture of brown sugar bananas to put in the center of the pancakes then roll them up for a sweet way to start the day.

I’ve mentioned before, my Dad is a great cook.  I remember the first time he let me make Swedish Pancakes during the holidays.  Boy, was I important!  I got to mix the batter. Grease the pan. Learned how to move the pan just right to make sure the pancake is thin and crispy. 

While the recipe may have changed over time making these reminds me of how proud I was making these pancakes for the first time.  Now I might have to pass this recipe for Swedish Pancakes with Brown Sugar Bananas to my Dad!

How to make Swedish Pancakes:

Mix all the pancake ingredients in a bowl.  It’s important to keep the bowl next to the stove with a ladle.  With a mid-sized skillet add a small dab of oil to the pan.  You can see my setup here.  Also, make sure that you have a plate to add your pancakes too.  They cook quickly!

From there you will add a ladle full of batter then spin the pan in a rotating fashion to thin it out.  Cook for 1-2 minutes.  Flip and cook around 30 seconds for the second side.

How to make Brown Sugar Bananas:

Next is the sauce, which is so easy! Chop the bananas.  Add butter to a pan and start to melt.  Add brown sugar, then bananas.  Let cook for around another minute then add the water cinnamon and nutmeg.  Take off heat, you’re done.

How to Roll Swedish Pancakes:

What I want to point out is the ‘roll’.  But I digress. I have a helpful little photo tutorial below for the ‘roll’.  Fill the center of the pancake, hook fork into the side and ‘roll’.

Tips:

  • Don’t like bananas? The sauce works well with many other fruits like peaches and plums.
  • No buttermilk on hand? Using soured milk works just as well. To sour milk take 1 cup of regular milk then add 1 Tbs vinegar or apple cider vinegar and let sit for 5-10 minutes.

Instructions
Swedish Pancakes
  1. Mix all the pancake ingredients in a bowl. It's important to keep the bowl next to the stove with a ladle. With a mid-sized skillet add a small dab of oil to the pan.
