These Beer-Braised Pork Tacos with Creamy Apple Coleslaw are the perfect combination of spicy & sweet.
For this Mitten Movie Night, I am using one of the favorites of the Fall season, apples. But I am not going to use them in a dessert, I’m using them in one of my favorites, tacos!
I really love tacos! Whether they are made with seafood or ground beef or drizzled with a buffalo ranch, I am eating them!

These tacos take a cubed pork tenderloin and braise it in beer, and pressure cook it until it falls apart.
Add the meat to soft flour tortillas then top with a creamy homemade coleslaw that has in it…you guessed it….apples! So easy and delicious it goes great on top of sandwiches or a side dish too.

Tonight we are watching a horror movie that is so SCARY and great to watch this time of year, The Babadook. This movie is over 5 years old and I’ve seen it many times, but it continues to be one of the movies that I can watch and continually be scared by it.
What beer pairs well with tacos topped with a creamy apple coleslaw?
The beer: Oro De Tontos from Greenbush Brewing
The light flavor of this beer and the crisp finish leaves room for the combination of flavors in the taco to shine through.
Ingredients for pulled pork tacos
These soft tacos have –
- Homemade dry rub seasoning
- Cubed pork tenderloin
- Beer for braising
- Soft tortillas
- Coleslaw mix, chopped apples, and a mayonnaise-based dressing
How to make beer-braised pork tacos with creamy apple coleslaw
In a small bowl add the dry-rub ingredients: salt & pepper, chili powder, garlic powder, paprika, and brown sugar. Stir to combine. Reserve 1 Tbs of this rub to add to the apple coleslaw.
The thing that makes this pork so good is adding TONS of flavor with this rub. It gives the meat a smoky, sweet coating that gets cooked into all the little bits when it’s sauteed in oil then cooked in a beer bath that will have you putting this rub on eeevvvverrrryyytthing.
Cube the pork and pour that rub all over the pieces. Rub it in real good.
I made this meal in one of my new favorite things, my CrockPot Express. It’s like an Instant Pot but I feel like I can’t say ‘Instant Pot’. It cooked the meat and made it so tender. *If you do not have a pressure cooker/Instant Pot see notes for how to cook on the stovetop/oven.
How to make beer-braised pork in the pressure cooker
First set the pressure cooker to the ‘sautee’ setting and add 1 Tbs of olive oil to the bottom left of the pot.
After 3 minutes of heating the oil up, add the cubed pork to the pan. Sautee until all sides are browned. The meat does not need to be cooked, this just seals in the juices.
Once the meat is browned, add the beer. I use a Yuelinging as my main cooking beer because it has a light taste but feel free to use any lager, amber, or Cerveza.
Put the lid on and make sure the valve is set to close. Set the pressure cooker to the manual setting for 40 minutes.
Let the steam manually release for 10 minutes then remove the lid.
How to make creamy apple coleslaw for tacos
For the creamy coleslaw topping to a bowl add the coleslaw mix, mayonnaise, salt & pepper, chopped apple, honey, and apple cider vinegar.
The final touch to the coleslaw is to add 1 Tbs of the spice rub you put on the pork.
Stir everything to combine. You can make it right before serving the tacos or you can put make early and put it into the refrigerator to let the flavors meld even further.
Remove the pork from the pressure cooker pot and shred the meat. It should come apart easily.

Beer-Braised Pork Tacos
Equipment
- pressure cooker
Ingredients
Pork Dry Rub
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon Spanish paprika
- 1/2 teaspoon garlic powder
- 1 tablespoon brown sugar
Beer-Braised Pork
- 2-1/2 pounds pork tenderloin cubed
- 12 ounces beer I used Yuengling
- 1 tablespoon olive oil
- 10 flour tortillas
Creamy Apple Coleslaw
- 1 cup coleslaw mix
- 1 small red apple chopped
- 1/4 cup mayonnaise
- 1 teaspoon reserved pork rub
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
Instructions
Pork Dry Rub

Notes
- Preheat the oven to 350 degrees and make sure your racks are placed so you can add the large pot or dutch oven since you will cook this all in one pot.
- Heat 2 Tbs oil then add the cubed pork into the pot. Sautee the pork until all sides are browned, no need to cook all the way through.
- Once the pork is browned, add the can of beer and 1/2 cup of beef broth.
- Place a top over the pot and into the oven this goes for 2-2 1/2 hours.
- Take the pieces out of the pot and shred it.
