Party Perfect Spinach & Artichoke Dip

Well, the Holiday Season is upon us.  Whether I have to drag you kicking and screaming and inject you with season cheer.  Or if you’ve had your finger on the Christmas tree lights while wearing your reindeer antlers. It’s here.  Alas!  Now me, I’m a holiday person.  Pumpkin pie, dress the turkey, trim the tree, hang the stockings. Yes to all of it! But once the holiday is over-I’m over it.  The next day: Tree-gone! Lights on the house-gone! Let’s not dwell and start thinking about the new year.  But while it is here, I really do enjoy every moment of it.  So this year one of the ways we’re going to enjoy it is by having some friends over for a Craft Beer Tasting Party!

Santa likes craft beer as much as I do! Or I inadvertently placed that there.

Usually when we have a party it’s BYOB and a dish to pass.  Which is great as the host I only have to come up with one dish and also get to try all the great food that our friends make.  This year I’m making Party Perfect Spinach & Artichoke Dip.  It’s a dish that I see on almost every brew pub menu so it’s a great appetizer for this party.  Let’s get cooking. Or stirring, because it’s that simple. Cook the spinach to package directions and make sure it’s strained.  Mix all other ingredients together up until the shredded cheese.  Split half into the mixture.  Put dip into an oven proof dish. Top with remaining cheese.  Bake at 375 degrees for 15-18 minutes or until cheese is melted. Like I said, party perfect!

Party Perfect Spinach & Artichoke DipFor the ultimate craft beer party a tasting set is key.  It gives guests a unique way to experience craft beer.  Each glass contains a tasting marker for what beer goes best with what glass.  These also make spectacular Christmas gifts for the Craft Beer Lover in your life.

Since we are having a craft beer party I thought I would throw out the usual BYOB for this party and call it the ‘Sixer Mixer’. Bring a six pack of beer for all to share.  Some like IPA’s, some like Hefeweizen.  Some like Pilsners, some like Stouts.  Beer has a unique talent of finding just the right one for you.  Plus this beer sharing goes perfectly with the fun game that we’re playing, Brew Haha!  Can you get creative enough to beat your friends?

And finally what is a party without music?  Hook up the Friday Afternoon Speaker and crank up the jams.  Crack your beer open, tip it over then put the phone in the now available ‘holder’.  I highly suggest queuing up some Yelawolf.  He is backed up by a Michigan native, maybe you’ve heard of him, Eminem!  If you have someone on your gift list that loves music and beer, this would make a great gift.

Instructions
  1. Combine all ingredients through the shredded Italian cheese. Please 1/2 into the dip.
  2. Place dip into an oven proof dish. Top with remaining cheese.
  3. Bake at 375 degrees for 15-18 minutes or until cheese is melted.
  4. Serve with crackers, bread, or pita crisps. Just don't double dip! Enjoy.

Chicago Deep Dish Pizza #SundaySupper

Next time a craving for pizza takes over skip the local pizza place, forget the boxed cardboard frozen stuff and make your own!  Thick crust that is loaded with toppings, cheese and tomatoes.  Baked to gooey perfection.  Forget traditional crust and make this Chicago Deep Dish Pizza.

Where we live we are about 2 hours from many major cities.  That means we can stay home or go visit Indianapolis, Detroit, Toledo (their craft beer scene is awesome~I highly suggest giving it a try) or Chicago.  While we don’t hit Chicago very often we were able for a time to get real deep dish at a Gino’s East location that they had about a half hour from us in Granger, Indiana.  Sadly though it closed.  So it was up to make the thick pizza that I loved so much!  Other than the sausage that comes on an authentic Gino’s East, which is amazing, I think I pulled it off a pretty good copycat.

Start off with your crust.  This recipe is very similar to my White Chicken Pizza with Basil & Blackberry Sauce with the exception of reducing the flour and adding cornmeal to the dough.  It gives it that crunchy texture that most deep dish pizzas have.  Gather your ingredients….

Mix yeast, water & honey together.  Cover bowl with plastic wrap and let sit for 10 minutes.  You should see bubbles are formed on the top of the water/yeast mixture.  Now add the flour, honey & salt to the yeast mixture.  Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil.  Put a towel over the bowl and let rise for 15-20 minutes.

Once the dough has risen uncover and place on a floured surface.  Roll with a rolling pin to almost double the size of your pan so there is plenty to go around the deep edges of a greased springform pan.  Place the dough into the pan cinching edges as not to overlap over the top of the pan.  Brush crust with 2 Tbs. melted butter all over then place in a preheated 375 degree oven to bake for 8-10 minutes.  Take out of the oven and now it’s time to load it up!  Layer cheese, filling, more cheese then top with the drained tomatoes.  It’s very important that the tomatoes are drained because you don’t want the juice making your crust soggy.

My filling is a combination of Italian sausage, hamburger, mushrooms, green peppers, olives, onions, garlic cloves mixed with Italian seasonings and tomato paste.  I will put the full ingredients below but this is your pizza please add whatever you like!  A great crust, lots of cheese and the crushed tomatoes really are what make a deep dish what it is.  A blank slate to add whatever toppings you like.  Once all your layers are on place in your oven that is already preheated at 375 degrees.  And here you are….

Instructions
Deep Dish Crust
  1. Mix yeast, water & honey together. Cover bowl with plastic wrap and let sit for 10 minutes. Add flour, honey & salt to the yeast mixture. Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil. Put a towel over the bowl and let rise for 15-20 minutes.
  2. Once the dough has risen uncover and place on a floured surface. Roll with a rolling pin to almost double the size of your pan so there is plenty to go around the deep edges of a greased springform pan. Place the dough into the pan cinching edges as not to overlap over the top of the pan. Sausage Filling
  1. Brown sausage and hamburger. Add onions, green peppers, olives, mushroom and garlic. Cook all together the meat is cooked through and the vegetables are soft.
  2. Add in tomato paste, Italian herbs and sugar. Take off heat. Add to pizza in a thick layer.
  3. Take crust out of oven. Load with layers like this: -1/2 Cheese -Filling -Remaining Cheese -Drained tomatoes
  4. Once all your layers are on place in your oven that is already preheated at 375 degrees.
  5. Cut into 8 pieces and enjoy!

Bacon Shells & Cheese

Ah…finally Friday!  After last weeks long weekend and the kids finally going back to school, I am ready for this Mitten Movie Night.  If your like me then put your feet up and dig into this delicious and creamy Bacon Shells & Cheese.

This week I made a pasta that comes together quickly.  As always, enjoying with some amazing craft beer,  Lagunitas Lucky 13, which is one of my husband’s favorites.  Still not 100% percent set on what we’re watching but it may be Bad Grandpa.  It came in our Netflix disc queue but I don’t know if I’m sold on it.  What are your thoughts?

When I pulled out the bowl that I usually place my pasta in I realized that it has held up very well.  It was a gift from my cousin for my wedding.  That means this month it is 13 years old!  It’s so beautiful and gives any pasta I put into it a beautiful presentation. So enough reminiscing let’s get into it.

When I say that this pasta comes together quickly, I’m not exaggerating.  Start your pasta to boil and your diced bacon to cook according to package directions, they take approximately the same amount of time. While they are both cooking chop your vegetables.

Once your pasta has cooked drain and set aside.  Once bacon has cooked remove from the pan and reserve 1 tsp. of the bacon grease.  Not too much but enough to keep the flavor.  In the same pan melt 1 Tbs. butter in the bottom then add onions and zucchini.  Soften for around 3 minutes.  Add tomatoes.  Sautee quickly.  Over the top of the vegetables sprinkle the flour and stir.  Pour in milk.  Bring to a simmer and add Parmesan cheese, Italian cheese, garlic powder and pepper.  Let thicken, which should take about 2-3 minutes.  Put your pasta and bacon back into the pan.  Transfer to beautiful serving bowl, garnish with more cheese & basil.  And here you are…..

White Chicken Pizza with Basil & Blackberry Sauce

It’s time for Mitten Movie Night!  I’m serving up a creamy, cheesy white chicken pizza with an added sweet twist on top and enjoying one of my favorite Michigan Craft Beers.  This pizza makes perfect use of summer grown basil, I know my plant is bursting.

Tonight I made White Chicken Pizza with Basil & Blackberry Sauce.  A sweet & savory combination on a homemade pizza crust.  While this has a long and fancy name trust me it didn’t take long at all.  Best of all it is delicious!  We are watching Joy.  Jennifer Lawrence kind of rocks, right?  And finally we are drinking Oberon from Bell’s Brewery.  If you are even remotely close to Kalamazoo, Michigan it is a must visit for any craft beer lover.  So gather your ingredients….

Start with the crust.  Mix yeast, water & honey together.  Cover bowl with plastic wrap and let sit for 10 minutes.  See photo below in the collage to make sure yours has the same consistency.  Now add the flour, honey & salt to the yeast mixture.  I do not have a fancy mixer (I want one so bad!) so I had to just hand mix this.  Start by stirring with a spatula then complete by hand.

Once it is all combined flip out of bowl onto a floured surface.  Cover with towel and let sit for 5 minutes.  Uncover and roll your dough out to the size of your pan.  Mine is pretty cool, it has holes in the bottom of it which makes the crust really crispy.  Once the dough is on the pan place in the oven at 450 degrees for 12-14 minutes.

While the pizza crust is doing it’s first bake through cut up 1/2 an onion and shred up your chicken if it isn’t already.  We get rotisserie chickens from Costco so I cut off about half the chicken to use.  In a pan heat up 1/2 Tbs butter, 1/2 Tbs olive oil and add your onions and chicken.  Saute until onions are soft (this will just heat your chicken up since it’s already cooked) around 5 minutes.

When the pizza crust has cooked for 12-14 minutes take it out of the oven and assemble the rest of the ingredients on the top of it.  Ricotta cheese, chicken & onions then the Italian Shredded cheese.  Place back into over for another 15 minutes.

About 5 minutes before your pizza is out of the oven add the blackberry preserves and 3 Tbs water to a small saucepan.  Bring to a boil letting the preserves breakdown to create a sauce. Once pizza is cooked right before serving sprinkle some chopped basil and blackberry sauce on top.  And here you are….
