Air Fryer Diced Potatoes {with Nacho Cheese Sauce}

These air fryer diced potatoes are coated in seasonings and panko breadcrumbs, then cooked until crispy. Serve with nacho cheese sauce on top.

Ingredients

Air Fryer Diced Potatoes

  • 4 medium potatoes cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Spanish paprika
  • 1 teaspoon dried parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil

Nacho Cheese Sauce

  • 4 ounces Mexican Velveeta Cheese cubed
  • 1/2-3/4 cup milk
  • sour cream and green onions for serving

Instructions

Air Fryer Diced Potatoes

  • Clean the potatoes then dice them into cubes.
    4 medium potatoes
  • Add the potatoes to a bowl and cover with cool water. Let sit for 30 minutes.
  • Pour out the water and use a paper towel to dry off the potatoes.
  • Drizzle with olive oil, and add seasonings and panko breadcrumbs. Stir to coat.
    1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1/2 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon Spanish paprika, 1 teaspoon dried parsley, 1 tablespoon olive oil, 1/2 cup panko breadcrumbs
  • Pour the potatoes into the basket of an air fryer. Set for 400 degrees for 10 minutes.
  • Remove the basket, use a large spoon or tongs to toss the potatoes, place the basket back and cook for 5 more minutes.
  • Repeat cooking and tossing potatoes until they reach the desired crispiness. About 25 minutes in total.

Nacho Cheese Sauce

  • Place the cubed cheese and milk in a small pot. Cook over low heat until the cheese has melted stirring frequently.
    4 ounces Mexican Velveeta Cheese, 1/2-3/4 cup milk
  • Serve the potatoes with the nacho cheese sauce, sour cream, and green onions on top. Enjoy!

Notes

Tips for making this recipe:

  • Make sure to give the potatoes at least 30 minutes to soak for the best possible outcome. 
  • When cooking the cheese sauce, make sure to keep it on low and let the cheese melt slowly. If it is rushed, the cheese will burn to the bottom of the pan. Add additional milk to the sauce if it becomes too thick.
  • To store: add the potatoes and cheese sauce in separate covered containers. Reheat the potatoes in the air fryer and the sauce in the microwave.
