Black Beans
1pounddry black beanssoaked overnight

Fried Smoked Sausage

Instructions
Black Beans
Rinse the black beans.
1 pound dry black beans
Add the beans to a large bowl and cover with water. Place plastic wrap over the top of the bowl and let the beans soak for 8 hours, minimum.
Rinse the beans again, then add to a large stockpot. Cover in 8 cups of water.

Set the stove to medium heat and simmer the beans for 1-1/2 hours.
Turn the heat up on the stockpot. In a bowl, add the beef broth and stir in the cornstarch. Pour into the pot.

Bring to a boil and let the liquid in the pot thicken, takes about 3-5 minutes.
Add the seasonings. Turn off the heat.

Fried Smoked Sausage
Cut the smoked sausasge into coins.
Place a pan on the stove and turn to medium-high heat. Add the olive oil to the pan.

Add the smoked sausage to the pan and sautee until golden brown, for about 5 minutes.
14 ounces smoked sausage
Serve the black beans topped with the smoked sausage. Enjoy!

Tips for making this recipe:
You can use 3 cans of black beans in place of the dried black beans, just make sure to rinse them before using them.
To store: add the beans and sausage to a covered container. Reheat in the microwave or stovetop in a pot, and add a little liquid if reheating this way.
