Clean the potatoes and cut them into thick wedges.
5 medium/large potatoes
Add the potatoes to a bowl, then add water to cover all the potatoes. Set aside for at least 1/2 an hour.
In a small dish, add the olive oil, chili powder, cayenne, sugar, pepper, salt, garlic powder, onion powder, and Spanish paprika. Stir to combine together.

After half an hour, drain the water and rinse the potato slices.
Using a couple of paper towels, dry off the potatoes.
Drizzle the olive oil over the top of the potato wedges, then sprinkle with the seasoning.

Stir everything to combine and coat the potatoes as evenly as possible.
Set the air fryer to 400 degrees and add the potato wedges to the basket.
Add them to the basket of the air fryer and set the timer for 10 minutes.
Remove the basket and use a spatula to turn the potatoes. Return the basket and cook for another 6 minutes.
Check to make sure the center is tender. The time may need to be adjusted up or down depending on the thickness of the cut.
Serve with a side of sauce, a simple combination of 1:1 mayonnaise and ketchup. Enjoy!
