Smoke Sausage Nachos

These smoked sausage nachos have layers of tortilla chips, smoked sausage, peppers, and onions are smothered in beer cheese sauce.

Ingredients

  • 1 13-ounce bag restaurant style tortilla chips
  • 1 small yellow onion chopped
  • 1 cup sliced sweet mini peppers seed removed and sliced
  • 14 ounces smoked sausage I used skinless smoked sausage
  • 1/2 tablespoon butter
  • 1 teaspoon olive oil
  • 2 cups beer cheese sauce I used The Chunky Chef's Creamy Beer Cheese Sauce recipe

Instructions

  • For the beer cheese sauce, I used a recipe from, The Chunky Chef. I used Yuengling for the beer.
  • Chop the smoked sausage, peppers, and onions.
  • In a pan heat up 1 tsp olive oil and butter, then saute the sausage, peppers, and onions until the peppers and onions are cooked, around 6-8 minutes.
  • On a sheet pan spread out the tortilla chips. Add the sausage and peppers over the top.
  • Finally, pour the beer cheese sauce over the top. Serve immediately.

Notes

Tips for making this recipe:

  • Only make this recipe if you are going to eat it immediately because the beer cheese can make the tortilla chips soggy.
  • If you are not making it immediately, you could set the ingredients in separate containers and let the guest build the nachos and pour the sauce on their own.
  • To store: Add leftovers to a covered container and refrigerate. If you think there will be leftovers I suggest not pouring the beer cheese over the top and keeping it in a separate container to keep it from making the nachos soggy. Reheat in the oven or air fryer at 400 degrees for 10 minutes.
