Swedish Pancakes with Brown Sugar Bananas

Ingredients

Swedish Pancakes

  • 1-1/2 cup flour
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cup buttermilk
  • 1 teaspoon vanilla

Brown Sugar Bananas

  • 1 stick unsalted butter
  • 1/2 cup brown sugar
  • 4 bananas
  • 1-2 tablespoons water
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

Swedish Pancakes

  • Mix all the pancake ingredients in a bowl. It's important to keep the bowl next to the stove with a ladle. In a small saute pan, add a small dab of oil to the pan.
    1-1/2 cup flour, 2 tablespoons brown sugar, 2 eggs, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 2 cup buttermilk, 1 teaspoon vanilla
  • From there, you will add a ladle full of batter, then spin the pan in a rotating fashion to thin it out. Cook for 1-2 minutes. Flip and cook for around 30 seconds on the second side.

Brown Sugar Bananas

  • Chop the bananas. Add butter to the pan and start to melt. Add the brown sugar, then the bananas. Let it cook for another minute, then add the water cinnamon, and nutmeg. Take off of the heat.
    1 stick unsalted butter, 1/2 cup brown sugar, 4 bananas, 1-2 tablespoons water, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg
  • Fill the center of the pancake with the brown sugar bananas and roll with a fork. Top with more sauce. Enjoy!

Notes

Tips for making this recipe:

  • Don't like bananas? The sauce works well with many other fruits like peaches and plums.
  • No buttermilk on hand? Using soured milk works just as well. To sour milk take 1 cup of regular milk then add 1 Tbs vinegar or apple cider vinegar and let sit for 5-10 minutes.
  • To store: add to a covered container. Reheat in the microwave. Eat within 3 days.
