Bubble & Squeak (with Ham and Eggs)

This bubble and squeak recipe has fried potato and cabbage patties with eggs and ham. Hollandaise sauce adds a delicious final touch.

Equipment

  • 9x13 baking sheet
  • parchment paper
  • large stockpot
  • potato masher
  • large saute pan

Ingredients

  • 1/2 small head cabbage chopped
  • 1 small white onion chopped
  • 2 cloves garlic
  • 4 potatoes peeled and chopped, add water to boil
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 1/2 cup flour
  • 2 eggs beaten
  • 1/2 cup bread crumbs, original
  • salt and pepper to taste
  • 1 tablespoon parsley flakes 1/2 in potato mixture, 1/2 for topping
  • 8 eggs fried or poached
  • 6 ham steaks heated
  • 0.9 ounces Knorr Hollandaise Sauce pkg prepared to package directions

Instructions

  • Clean, peel, and chop potatoes then add to water. Boil for 20 minutes until tender then drain.

  • To a food processor add the cabbage, onion, and garlic and pulse until they are in small pieces.

  • Soften 1 Tbs butter in the pan the potatoes were cooked in. To the pot that the potatoes were cooked in sautee the cabbage mixture for 4-5 minutes.

  • Add the potatoes back into the pan plus the milk, butter, salt, and pepper to taste, and parsley flakes. Using a potato masher smash everything together.

  • Take a cookie sheet and add parchment paper. Scoop out 8 patties then put them into the freezer for up to an hour.
  • In 3 separate bowls add 2 cracked eggs, 1/2 cup flour with salt and pepper to taste, then 1/2 cup breadcrumbs.

  • Bring 1/2 cup oil to frying to med/high heat for frying. Take the patties, flip on both sides into the flour, then the egg, then the breadcrumbs.
  • Add to oil in the pan-frying on each side for 4-5 minutes. Remove and add to a plate with a paper towel.
  • Serve with eggs, ham steaks, and Hollandaise sauce of choice. Enjoy!

Notes

Tips for making this recipe:

  • Make sure that you plan for the extra hour to this recipe for freezing the patties. They just do not hold up without being able to firm up in the freezer and you will have trouble keeping them together as you fry.
  • I like to use Knorr Hollandaise sauce mix which I referred to in the ingredients list, but feel free to make your own homemade sauce.
  • These can be topped with any style of egg. My family prefers over-easy eggs with yolk so that is how I served them.
