Loaded Cheese Fries

Crisp french fries loaded with all the goodies like tomatoes, jalapenos, smoked beef and a smooth and creamy cheese sauce. Perfect for sharing...if you want!

Ingredients

Brine/Rub

  • 1 can Coca-Cola
  • 2 Tbs kosher salt
  • 2 Tbs apple cider vinegar
  • 1 Tbs garlic powder
  • 1 Tbs onion powder
  • 2 Tbs molasses
  • 3 Tbs meat rub I used Legion of Spice Bayou Black

Cheese Sauce

  • 2 Tbs butter
  • 2 Tbs flour
  • 1/2 cup milk
  • 1 cup triple cheddar cheese blend

French Fries & Topping

  • 1 bag frozen french fries prepared to package directions
  • 1 small yellow onion sauteed
  • 1/2 Tbs butter to sautee onion in
  • 6-8 cherry tomatoes chopped
  • 2 ounces jalapenos from jar chopped
  • chopped parsley for garnish

Instructions

Brine/Rub

  • On the stove top heat up all the ingredients in a small pan. Let come to a boil then remove from heat and allow to cool.
  • Once cooled put in a baking dish with the meat. Cover and refrigerate for at least 8 hours.
  • Before putting the meat into the smoker pat it dry then generously cover with a dry rub. Follow your smokers user directions for cooking time but it generally is 1 Hour per 1 Pound of meat. This roast took an 2-1/2 hours. Turn off the smoker. Take out and cover with tinfoil and return to smoker to rest another 20 minutes.

Cheese Sauce

  • Melt butter in a small pan. Gradually add flour. Then gradually add milk. Once it's all combined add cheese to mixture. Stir until melted. Use to top the french fries.

French Fries & Topping

  • Prepare bagged fries to package directions.
  • For the toppings chop up some tomatoes and jalapenos. Sautee an onion in some butter.
  • Assemble by starting with a french fry base, add sweet onions, tomatoes and jalapenos, the meat that has been cut into strips then finally smother in cheese sauce. Garnish with parsley. Enjoy!
