Veggie Sandwich

This Veggie Sandwich has layers of mayo with pesto, vegetables, and cheese placed between slices of sourdough bread. Cook in the air fryer until crunchy on the outside and gooey on the inside.

Ingredients for the Veggie Sandwiches in the Air Fryer

2 tablespoons mayonnaise 1 teaspoon basil pesto 2 pieces sourdough bread 1/2 medium cucumber 1 medium beefsteak tomato 1/2 small white onion 1/2 cup shredded Colby jack cheese 2 tablespoons butter 1/2 teaspoon dried basil

Prep Time 5 minutes

Cook Time 8 minutes

Make the pesto mayo

Mix together the mayo with prepared pesto. Combine.

Build the sandwich

Place bread butter side down. Spread with mayo mixture. Add cheese.

Add the veggies

Layer with the thinly sliced veggies, cheese, & mayo, Add butter & basil to top.

Cook

Air fryer for 5 minutes at 350-degrees. Flip and cook for 2 minutes more.

Serve

Cut the sandwich in half and serve immediately.
