Baked Shredded Chicken Burritos

Best way to cook chicken breasts to use for shredded chicken:

I like to make my shredded chicken in the Instant Pot. Add chicken, 2 cups water, set to 'poultry' and cook for 35 minutes.  If you have a KitchenAid mixer you can shred the chicken using the dough hook.

Baked Shredded Chicken Burritos

6 flour tortillas, burrito size 2 cups cooked chicken shredded 16 ounces thick and chunky salsa 8 ounces shredded colby jack cheese

All you need is salsa, shredded chicken, tortillas, and cheese to make these baked shredded chicken burritos. This easy meal will become a family favorite!

Spread 1/4 cup thick and chunky salsa in the bottom of a 9x13 baking dish.

Add the rest of the jar of salsa to 2 cups cooked and shredded chicken.

Place some of the shredded chicken mixture into the center of a flour tortilla.

Roll up and place seam side down. Repeat with 5 more tortillas.

Top with any leftover chicken and the shredded cheese.

Bake uncovered at 375 degrees for 20 minutes.
