For the mayo topping: combine mayo, Parmesan cheese, garlic, artichoke hearts, and lemon juice.
For the crumb topping: melt the butter. Once melted, add the breadcrumbs and stir until combine completely.
Heat oven to 400 degrees. Place salmon onto a greased sheet pan. Spread the mayo mixture then sprinkle the breadcrumbs.
Wash and chop the vegetables.
Take the vegetables and layer them around the salmon. Drizzle with olive oil.
Place it into the preheated oven and cook for 30 minutes.
The salmon comes out flaky and the vegetables cooked tender.
