Porcupine Balls with Zucchini Noodles

Porcupine balls have ground beef mixed with brown rice, egg, and breadcrumbs.  Serve with baked zucchini noodles and spaghetti sauce.

Ingredients for a Porcupine Meatballs & Zoodles

1 pkg microwave brown minute rice 1 pound of ground beef 1 egg 1/4 cup panko breadcrumbs 1/4 cup whole milk 1 jar spaghetti sauce Parmesan 2 medium zucchini 1 tablespoon olive oil 1 small yellow onion 1/4 cup cherry tomatoes 

Prep Time 10 minutes

Cook Time 35 minutes

Make the meatballs

Cook the rice & let cool. Add to ground beef, egg, milk & breadcrumbs. 

Make the zoodles

Spiralize & toss with onion, tomato & olive oil. Bake with meatballs at 350 for 30 minutes.

Assemble the dish

Top the zucchini noodles with spaghetti sauce.

Top with meatballs

Add the meatballs.

Serve

Add more spaghetti sauce to the meatballs. Serve with parmesan.
