One Pan Baked Salmon with Vegetables

This easy one-pan baked salmon recipe is perfect for busy weeknights. It's cooked in 30 minutes with a delicious mayo and breadcrumb topping that will tantalize your taste buds!


1.25 pounds salmon fillets 1/2 cup mayonnaise 1/4 cup parmesan cheese 1 teaspoon lemon juice 3 ounces artichoke hearts chopped 2 garlic cloves minced 1 pound chopped vegetables use aspragrus, Brussels sprouts, green beans 2 teaspoon oil for greasing the foil & pouring over the vegetables 1 tablespoon butter melted 1/2 cup breadcrumbs I used smashed homemade croutons

Prep Time 5 minutes

Cook Time 30 minutes


Prepare the salmon


Add the salmon to a covered baking sheet.

Make the topping


Spread with the mayo and artichoke topping. Sprinkle with the breadcrumbs..

Add vegetables to pan


Place cleaned vegetables around salmon, then drizzle with olive oil.

Bake and serve


Bake at 400 degrees for 30 minutes. Serve with the veggies on the side.
