This omelet breakfast sandwich is stacked with ciabatta bread, basil pesto, ham, and a fluffy omelet base with added spinach and onions. An easy breakfast for one.
Heat oil in a pan and add the spinach and onions. Sauté for 2-3 minutes.
Mix together the eggs, milk, parmesan cheese, and black pepper.
Add the eggs on top of the spinach and onions. Cook until eggs are set.
Push eggs over and add the ham slices & brown. Add the eggs and ham to a plate.
Brown 2 slices of bread then build the sandwich and spread the pesto on.
