Easy  White  Chili

Tips for cooking with shredded cheese:

When using cheese that will be melted INTO a recipe, I like to buy the brick cheese and use a food processor to shred it, or a boxed grater.

Ingredients for this chili recipe:

2 tablespoons flour 2 tablespoons butter 5 cups chicken broth 2 cups cooked chicken shredded/chopped 4 ounces sharp cheddar cheese shredded 4 ounces Monterey jack cheese shredded 14.5 ounces diced tomatoes with green chilies drained 2-15 ounce cans cannelini beans drained and rinsed 2 tablespoon jarred sliced jalapenos chopped 1/4 cup red onion chopped 1 bunch fresh cilantro chopped and destemmed 1 teaspoon garlic powder 1/2 teaspoon ground cumin 1/2 teaspoon Spanish paprika 1/2 teaspoon black pepper 4 ounces cream cheese

Easy White Chili

Easy white bean chili is a one-pot recipe that starts with shredded chicken and beans, then loaded with simple chili ingredients and a creamy broth.

In a large stockpot, melt the butter.

Add the flour,  then stir.

Add 2 cups chicken broth and seasonings. Let the broth thicken for 4-5 minutes over medium heat.

Add the remaining broth and ingredients into the pot.

Stir everything together and let simmer for 8 minutes.

Add the cream cheese.

Let simmer again to cook down the cream cheese. About 5 minutes.

Top the chili with more onions, cilantro, jalapenos, and sour cream.
