In a large stockpot, melt the butter.
Add the flour, then stir.
Add 2 cups chicken broth and seasonings. Let the broth thicken for 4-5 minutes over medium heat.
Add the remaining broth and ingredients into the pot.
Stir everything together and let simmer for 8 minutes.
Add the cream cheese.
Let simmer again to cook down the cream cheese. About 5 minutes.
Top the chili with more onions, cilantro, jalapenos, and sour cream.
