This delicious breaded zucchini is the perfect summer side dish for any meal. With a simple breadcrumb and parmesan coating, the outside becomes crunchy when fried in oil and butter.
2 medium zucchini sliced into 1/4 inch rounds 1/4 cup plain breadcrumbs 1/4 cup shredded parmesan 1 egg 1 teaspoon water 1 Tbs butter 2 tablespoons olive oil 1/4 teaspoon black pepper 1/2 teaspoon garlc powder 1/2 teaspoon Italian seasoning 1/2 teaspoon salt plus additional for topping 1/4 cup ranch dressing for serving
Prep Time 5 minutes
Cook Time 8 minutes
Add the ingredients to a food processor and pulse. Add to a bowl. Crack eggs into another bowl.
Melt butter and oil
Heat both in a cast iron skillet on medium-high heat.
Dip the zucchini rounds in the egg, then the breading. Place in the pan.
Serve
Fry in a single layer in the pan for 2 minutes each side. Serve with ranch.
