Baked Meatball Sandwiches

Tips for making baked sub sandwiches with meatballs:

Cutting out a well in the center of the buns keeps the meatballs inside the bun, instead of sliding out if you just keep the buns split on the side.

Ingredients for  these baked meatball sandwiches:

5 sub sandwich buns 1 pound ground chicken 1/2 cup Italian style breadcrumbs 1/4 cup whole milk 1/4 cup shredded Parmesan cheese 1 egg 1 tsp minced garlic 2 tablespoons fresh basil chopped 1 cup shredded mozzarella cheese 2 tablespoons melted butter 1/4 cup light olive oil 2 tablespoons balsamic vinegar 1 teaspoon Italian seasoning 1 teaspoon garlic powder 1/2 cup cherry tomatoes diced 1 bunch fresh basil chopped 1/2 teaspoon kosher salt

Baked Meatball Sandwich 

Baked meatball subs have tender baked ground chicken meatballs, buns brushed with a homemade dressing, then baked with cheese on top. Add a simple tomato and basil garnish for serving.

Preheat oven to 375 degrees. Mix together the ground chicken meatball mixture.

Make 15 meatballs and place them on a parchment lined baking sheet. Bake for 20 minutes.

Use a knife to cut a long rectangle in the sub buns.

Cutout center of the bread.

Mix together the balsamic vinaigrette ingredients.

Brush the vinaigrette into the center of the buns.

Place three baked meatballs into the center of each bun.

Sprinkle the tops of each bun with shredded mozzarella cheese.

Bake for 15 minutes.

Mix the Caprese salad ingredients together.

Serve the baked sandwiches with the Caprese salad. Enjoy!
