Sausage Wrapped in Cinnamon Rolls

Looking for an easy breakfast or after school snackSausage Wrapped in Cinnamon Rolls with drizzled icing uses only two ingredients and will have kids and adults raving.  Pre-cooked sausage and pre-made cinnamon rolls get breakfast or snack time wrapped up within 15 minutes.

I made these with my 12-year-old in mind.  Like most kids his age I’m sure, he always comes home from school starving! Like, eat us out of house and home starving.  I feel like sometimes I’m letting him down with no real good alternatives to ‘grab a yogurt’.

Since he loves to dip sausage into his syrup anytime I make my Swedish pancakes or even Pigs In a Blanket, it seemed like this recipe would be a no-brainer.  Sweet cinnamon rolls wrapped around savory sausage then baked to perfection and drizzled with icing. Yes, it did go over just as expected. He loved them.

Not only is this breakfast really easy, but it can also be made in several different ways. Using different sausage and cinnamon roll combinations you can really change it up.

What combinations of cinnamon rolls and sausage work well together?

  • Turkey Sausage wrapped in Orange Rolls with Orange Icing
  • Maple Sausage wrapped in Pumpkin Spice Rolls with Pumpkin Spice Icing

How to make Sausage Wrapped in Cinnamon Rolls:

Preheat the oven to 400 degrees.

Place parchment paper on a large cookie sheet.

Lay the cinnamon rolls out on the top half of the pan and set the icing off to the side.

Open the package of pre-cooked sausage.

Unroll the cinnamon roll then starting at the top of the sausage link, start wrapping the dough around it.

Place the wrapped sausage back on to the cookie sheet.

Continue with the rest of the rolls.

Bake at 400 degrees for 15 minutes.

Take out of the oven and drizzle with the icing that comes with the cinnamon rolls.

Instructions
  1. Preheat the oven to 400 degrees.
  2. Place parchment paper on a large cookie sheet.
  3. Lay the cinnamon rolls out on the top half of the pan and set the icing off to the side.
  4. Open the package of pre-cooked sausage.
  5. Unroll the cinnamon roll then starting at the top of the sausage link, start wrapping the dough around it.
  6. Place the wrapped sausage back on to the cookie sheet. Continue with the rest of the rolls.
  7. Bake at 400 degress for 15 minutes.
  8. Take out of the oven and drizzle with the icing that comes with the cinnamon rolls. Enjoy!

Sausage Hash Brown Casserole

Do you love making big breakfasts during the weekend?  Or like to make a breakfast casserole on Sundays so there are plenty of leftovers for weekday mornings?  If you say ‘yes’ to either of those then this Sausage Hash Brown Casserole is for you!

This casserole is loaded with potatoes, sausage, cheese, eggs and a special ‘secret ingredient’. This stick to your ribs recipe is made for a crowd or even better as leftovers.

I first had this dish while staying the weekend with my family up in Muskegon.  It was such a great weekend visiting with family and lots of great food.  On Sunday morning, we woke up and my stepmom made a big breakfast and the main dish was this sausage hash brown casserole.  It was so good!

While I was gobbling it down I asked her what was all in it so that I could make it once we got home.  She said the first few ingredients which were a given: hash browns, sausage, cheese….but then she said ‘french onion dip’.  What?  You mean like chip dip?  Yes!  Even though it’s not something that I would have thought of, I now can’t imagine a savory breakfast casserole that isn’t a combination of creamy sour cream and french onion dip.  Now on to the breakfast casserole recipe!

How to make Sausage Hash Brown Casserole:

Start by defrosting the hash browns according to the package directions.

While the hash browns are thawing, in a pan on the stovetop cook the breakfast sausage and onions until cooked all the way through.  Should take around 8-10 minutes.

Remove the sausage from the pan and place on a plate with a few paper towels.  Depending on how fatty your sausage is there may be grease that needs to drain off.

Ingredients and steps for making Sausage Hash Brown Casserole.

Preheat the oven to 350 degrees and grease a 9×13 dish.

Next in a bowl whisk the eggs, milk, salt, pepper, and Spanish paprika. In a large bowl add the container of sour cream and french onion dip. Stir to combine.

Now add the thawed hash browns to the bowl followed by the egg mixture.

Finally, add all but 1/2 a cup of the cheese to the bowl.

Stir it all together so that everything is all combined well.  Add it to the prepared pan and spread it evenly.  Sprinkle with the remaining cheese on the top.

Cover the pan with tin foil then cook for 50 minutes.

Cut into 12 pieces and serve with a big bowl of fruit, biscuits, and jelly.

Tips for making Sausage Hash Brown Casserole:

  • Do not skip defrosting the frozen hash browns. If you try to cook them frozen your casserole will take about…5 hours to cook.  Now if you are having a really lazy Sunday then fine but you would probably have all your coffee drank by then and what fun is that?
  • Need this recipe for an even bigger crowd?  Double the batch and bake in a large foil 20×12 baking pan.  Add 20 additional minutes to baking time.

I first made this Gnocchi, Sausage & Spinach Soup recipe as something quick to take my best friend who was sick in the hospital. I was originally going to make a pasta dish with most of these ingredients but adjusted it on the fly to make the ultimate ‘comfort food’ soup to take to her so she could skip the hospital food. I’m glad I did because it has become something that I now make.

Top this with some homemade croutons and a sprinkle of Parmesan. The croutons give it really good crunch.

How to make Gnocchi, Sausage & Spinach Soup:

Start by melting half of the butter in a large stockpot, adding the onions and cook until softened.  Add garlic now—not before it will brown to fast and get bitter.

Now add the sausage and cook until browned. Once the sausage is cooked I usually either drain this on a plate with a paper towel or drain in colander. I DO NOT drain out all of the oil, I leave a little bit in the bottom and add then put the spinach into the pot.

Now add the other half of the butter.  Wilt the spinach. Chop up your tomato and add to the pot. Add the sausage back in.

To the sausage mixture sprinkle 1 Tbs of flour over it then stir to combine the flour.  This is what thickens the stock.

Ingredients and steps for making Gnocchi, Sausage & Spinach Soup.

Add the chicken stock now.  I love using bouillon so I heat up 1 cup of water and dissolve the cubes in that.

Then add the remaining water after that.  Finally put the gnocchi into the pot and set to cook over medium heat for 10 minutes.

Serve it up and add croutons & additional Parmesan.

Pigs In A Blanket #SundaySupper

It’s football season! All that excitement works up an appetite so of course football finger foods are in order.  One of my guy’s favorites, Pigs in a Blanket.

Yeah, football season is here! We are ready for it. Saturday mornings spent cheering on the kids at rocket football.  Afternoons cheering on your favorite college team.

Football season is a biggie here in the bottom left of the mitten.  Saturday mornings are usually spent at the football field.  My son is on the rocket football team and my husband is the coach.  Then the boys come home and watch football.

Now, I will admit that I really don’t watch football outside of my son’s games.  I have no allegiance to any team but I am here 100% for the snacks.  Is that bad? No, I don’t think so.  I mean look at these!!  Now on to the pigs in a blanket!

This is a recipe you want when you don’t want to buy a lot of ingredients or have a messy kitchen.  Do you have time to buy 3 ingredients, cut them up and then bake for 18 minutes?  And after such minimum effort, you have a delicious appetizer that will make every football fan raving?  Then these pigs in a blanket are for you.

How to make Easy Pigs in a Blanket:

Take the can of biscuits and open them up.  Cut each one into 4 pieces.  This will make 32 biscuit pieces.

Now take the beef sausages and cut them into 3 pieces each.  This will make 30 pieces of sausage.

Take the cheese and fold then cut into 8 pieces each to make 32 pieces.  See, the math doesn’t quite add up and you will be short 2 pieces of sausages.  I usually just cut 2 pieces in half, no one will notice when they are scarfing these down.

How to make Pigs in a Blanket step-by-step.

Preheat the oven to 375 degrees.

Now it’s time to start assembling the pigs in a blanket.  Pick up a piece of biscuit and flatten a little bit.  Add the cheese then the sausage.  Bring the ends over the sausage and pinch.  (You will see that some of my pigs didn’t get completely covered.  I’ve surmised that no matter how hard I pinch it’s almost inevitable that some will open during cooking.)

Place them on a baking sheet with either tin foil that greased or parchment paper.  Once all are assembled and the oven is heated place in the oven and cook for 18 minutes.

Once they are golden brown pile them on to a big plate and serve to your hungry fans.
