I’ve got something spicy on deck for this Mitten Movie Night!  These Buffalo Ranch Chicken Tacos are full of so much flavor. Soft tortillas filled with chicken, pico de gallo, cheese and finally topped with a buffalo ranch sauce that you will be putting on everything once you try it.

What beer pairs well with Buffalo Ranch Chicken Tacos?

The beer: Summer Love Ale from Victory Brewing Company

Can you believe that this Summer is half over?  Where did the time go?  What seems really odd is that we haven’t even been busy this summer.  So in order to celebrate the mid-summer slump let’s pair these fresh tacos with this perfect fruity compliment to the bite of the buffalo sauce and the jalapeno in the pico de gallo.

What movie pairs well with chicken tacos topped with buffalo ranch and Pico de gallo?

For tonight’s movie, I recommend ‘How It Ends’.  I am a big fan of post-apocalyptic movies and this one was right up my alley.  Check out Netflix to find this title.  So now on to these buffalo ranch chicken tacos!

How to make Buffalo Ranch Chicken Tacos:

Start by cutting each chicken breast in half to thin these out a bit.  Then cover with plastic wrap and use a mallet to beat the chicken down to about 1/2″ thick.

Heat the oil in a pan then sprinkle the creole seasoning over each side of the chicken.  Place the chicken into the pan and cook each side 4-6 minutes.  Placing the seasoning on the chicken make it look almost ‘blackened‘.

Once the chicken has cooked all the way through remove from the pan and cube.

How to make an easy Pico De Gallo:

You can hand chop all the vegetables and then mix them with the lime, cilantro, and cumin or you can save so much time by using a food processor.  It does make it a little watery from the tomatoes so what I do it strain in a mesh strainer over a bowl.  Saves so much time and tastes just as delicious.

How to make Buffalo Ranch Sauce:

In a bowl combine the buffalo sauce and ranch dressing.  This sauce is the key to making this chicken taco recipe the BEST!

For the flour tortillas, I love to cook them over the open flame on my stove.  You can, of course, skip this step if you like and just cover 8 tortillas with a warm, wet paper towel and microwave for 25 seconds.

Now fill the shells with chicken, cheese, pico de gallo then drizzle with buffalo ranch sauce.

Serve with Double Batch Smashed Beans and here you are…..

Wing Sauce Sliders

Crispy chicken is slathered in two different kinds of wing sauce then put on top of soft slider buns and topped with a crunchy Blue Cheese sauce.  Wing Sauce Sliders have all the things you love about wings on a slider!

I’ll be upfront right now. And this may make me unpopular but for a long time, I couldn’t even smell Buffalo Wing Sauce. In fact, it’s been over a decade that even looking at the sauce would give me chills. Flashback 2003….my husband had just won Virginia’s Strongest Man. We actually had friends in the area so we went out and celebrated afterward at a local wing place. Well, let’s just say that I ‘Celebrated’ a little too much **insert you shaking your head here because most of us have ‘been there’**.

But I can FINALLY say that after my pregnancy with my youngest my taste buds must have been awakened because I craved spicy stuff constantly and have been on the Wing Sauce bandwagon ever since. I’m like ‘Let’s put it on everything!’ Just like I do with these Wing Sauce Sliders.

Not only have my tastes changed over the years but my entertainment habits have too.  Now instead of going out and getting crazy I much prefer staying at home and spending Mitten Movie Nights making a great meal and pairing it with some great beer while watching some great entertainment.  Ok, now on to the food!

How to make Wing Sauce Sliders:

First, prepare the chicken. Cut the pieces down to size for as many sliders as you are expecting to prepare. After cutting them into as many pieces as you have buns (I had 12) pound them out with a mallet to thin them out. This helps to tenderize them and you don’t have to cook them as long so they turn out a little juicer.

How to make Wing Sauce Sliders:

Add vegetable oil to the pan. I usually use about 1/2 cup. Bring oil to a temperature that will ‘fry’ the chicken breasts. You can test by adding a little of the dredging mixture and see if it sizzles.

While that is heating up put 1/2 cup flour onto a plate. Dredge the chicken so it is coated on all sides of the chicken. Test to see if oil is hot enough. If it is, add chicken to pan.  Cook first side around 6-8 minutes–DO NOT TOUCH IT once it’s in the oil. I’m telling you, you want the crunchy part of this chicken to stay intact because it’s delicious and you will ruin it if you mess with it. Ok, rant over :’)

Flip over (again, only 1 time) and cook another 6-8 minutes. Remove from pan and let drain on paper towel.

While your chicken is cooking make up the sauces to go with these.

How to make Garlic Parmesan Wing Sauce:

Mix all the ingredients together in a covered bowl. Once the chicken is cooked take the amount of you want to have the Garlic Parmesan sauce on it and add to bowl with the combined sauce.

Cover & shake. Go ahead and get your arm workout for the day.

For the Buffalo Wing sliders just take some Frank’s Red Hot Buffalo Wing Sauce and add it to a covered bowl.

Just like with the Garlic Parmesan sauce shake the daylights out of it until the sauce covers all parts of the chicken.

How to make Blue Cheese & Celery Sauce:

The topper for these sliders is a Blue Cheese Sauce that is a perfect combination with the bite of the cheese, creaminess and then the crunch of the celery.  The perfect topping!

Put chicken onto your slider buns. Viola!

Take your sauce & slather it all over the top of your sliders.

Add tomato and lettuce so you get your veggies.

Four B’s Tostadas

Four B’s Tostadas has crunchy tortillas getting the 4 B’s treatment: beef, beans, blue cheese & buffalo sauce then cooling it down a little with some creamy ranch dressing.  A bold combination packed with tons of flavor.

Tonight for Mitten Movie Night we’re getting spicy.

What beer pairs well with spicy tostadas?

The beer: Sam Adam’s Octoberfest.

When researching what pairs well with Octoberfest I came across a great article from Serious Eats Beer Pairings: What to Eat with Oktoberfest BeersIt says that going ‘South of the Border’ is totally acceptable.

What movie pairs well with Four B’s Tostadas and Octoberfest?

For the movie, we are watching The Nice Guys. Ryan Gosling?  Yes please!

How to make Four B’s Tostadas:

On the stove add ground beef, garlic powder, chili powder, seasoning salt and cumin.  Cook beef all the way through.

Add your refried beans to a microwave safe dish and heat for 3 minutes to warm them up.  Once your beef and beans are cooked it’s time to make the tostadas.

In a small pan add oil for frying.  Heat the oil up for 2-3 minutes.  When oil is heated use tongs to add tortillas into the pan.

Fry one tortilla at a time for 2 minutes each side. Set up a plate with paper towels next to the pan to put the tostadas on once they are cooked.

When the tortillas are all cooked it’s as simple as setting up an assembly line.  Take the crispy (oh so good!) tostadas top with beans, seasoned beef, blue cheese and then drizzle with buffalo sauce and ranch to cool it off just a touch.

You could always take this fiesta up a few notches and use my Double Batch Smashed Beans or homemade rice for this meal.

Serve with tomatoes, green olives, lettuce, sour cream and a rice dish on the side.

And here you are…..
