This Deli Counter Turkey Sandwich is BIG on flavor! Crunchy bun, sliced turkey, creamy Swiss cheese, sweet dressing, and crunchy coleslaw. This will easily become your go-to sandwich!

I call this the ‘deli counter’ sandwich since I get most of the ingredients from saying ‘Can I have a 1/4 pound of this..’ at the deli counter because like the beer being mine, I am just making this sandwich for myself.  Mine, mine, mine!  The fellas in my house don’t have the affinity I do for a good sandwich.  No worries, more for me.

For entertainment, we are watching a show called The Detour.  It is a HILARIOUS comedy about a family you will easily fall in love with. The perfect escape and very binge worthy.

What beer pairs well with a Deli Counter Turkey Sandwich?

The beer: Oberon from Bell’s Brewing.

It’s officially Oberon season!  So tonight for Mitten Movie Night we picked this up from a great store in St. Joseph, MI called The Liquor Cabinet.  When looking to get lost in rows and rows of craft beer I suggest you go and take a visit if you’re in the area.

This amount made for a big sandwich with lots of flavors. If you’re making one sandwich (like me) get 1/4 sliced turkey then order the smallest bowl of coleslaw (around 1/4 pound).

The deli at my local store has homemade rolls that are amazing so I hope you do too, grab one!  I use them to make my Portobello Mushroom Burger.  Right by the counter, you can get slices of cheese, so I picked up some swiss cheese.

I was lucky enough to have the dressing so that was taken care of.

How to make a Deli Counter Turkey Sandwich:

Take a baking sheet then cut the bun in half, apply butter and place face down.  Put 1/4 turkey on the sheet pan with the bun then add the sliced cheese on top.

Bake at 350 degrees for 10 minutes.  As you can see below, baking the bun alongside the turkey and cheese make it the perfect base to build this turkey sandwich on.

After all done assemble bun, turkey with the melted cheese, coleslaw and drizzle with dressing.

All the ingredients you love in a great Italian sub are rolled up in pizza crust and baked to perfection in this Italian Sub Stromboli. Serve with pizza sauce for an easy meal or appetizer.

If you follow my blog at all, you will know that one of my favorite things in life are sandwiches. ALL kinds of sandwiches. Carb nirvana wrapped around delicious fillings and capped off with a different array of toppings and sauces. What is not to love?

So with this stromboli, I took my favorite ingredients for Italian subs and baked it in a pizza crust-thus a stromboli. Ham, salami, pepperoni, two types of cheese, tomatoes, peppercini’s and then topped with Italian dressing. All baked together to a golden brown. Mmmm, mmmm, mmmm.

Italian Sub Stromboli makes for a great meal or appetizer and goes from plain pizza crust to table in 30 minutes.

How to make Italian stromboli:

For this recipe, I used Wewalka Classic Pizza Crust. I liked using this because it already has parchment paper included which made rolling up the stromboli so easy.

Preheat the oven to 425 degrees.

Start by rolling out the pizza dough.

Next, start placing the Italian Sub ingredients onto one side of the dough, not in the middle.

Layer the ham, salami, pepperoni, swiss cheese, peppercinis, diced tomatoes, and mozzarella cheese. Pour the Italian dressing over the top, splitting between the two.

Since this pizza crust has the parchment paper built-in the rolling up of the stromboli is so simple. Start by folding the pizza crust over the filling.

Peel down the parchment paper down and repeat the process until the pizza crust is all rolled up and the filling is completely rolled up into the pizza crust.

Crimp the end of the pizza crust to seal the stromboli completely.

Whisk an egg then brush on top of the crust. This gives it a nice brown color on the top.

Using a knife, make 5-6 cuts on top of the crust so the heat can escape while baking.

Sprinkle with garlic powder and Italian seasoning.

Place in the oven and bake for 20 minutes.

BBQ Chicken & Bacon Sandwich

This BBQ Chicken & Bacon Sandwich recipe has all my favorite things in it!

I often profess my love for sandwiches. There are so many sandwich combinations you can make that it would really be hard to tire of them. Summer is also a great time to have sandwich fixings on hand for quick lunches or dinners in between trips to the lake or pool.

What craft beer pairs well with BBQ Chicken & Bacon Sandwiches:

The beer: Floridian Hefeweizen from Funky Buddha.

I fell in LOVE with this one while we were down in Florida on vacation. It’s a light drinkable beer that’s full of citrus notes and is similar to the blonde styles that I love so much.

What should I watch on TV while eating a sandwich?

Of course, this Mitten Movie Night HAS to be all about binging Stranger Things. While I didn’t make an Indiana Themed menu as I did for Season One, this chicken sandwich is tasty no matter where you live.

How to make BBQ Chicken & Bacon Sandwiches:

Preheat the oven to 375 degrees.

This recipe uses already cooked chicken breasts. Cooking up a few in the crock-pot then shredding is a quick meal must!

On a sheet pan split 6 brioche hamburger buns in half. Butter the tops and place face down on one half of the pan. Place the bottom half on the plan and spread the shredded cheese evenly between the 6 bottom sides.

How to prepare chicken sandwiches for baking.

Top with the pre-cooked shredded chicken, splitting the chicken evenly over the bottoms.

Place in the oven and bake 12 minutes.

Cook the bacon to the desired doneness then remove and drain on a paper towel covered plate.

Quick Coleslaw Recipe:

In a small bowl combine the coleslaw mixture, mayonnaise, vinegar, mustard, and sugar.

Making it up to a half-hour early and placing it in the refrigerator makes sure all the flavors meld together beautifully.

Coleslaw makes for a great BBQ chicken sandwich topping. It’s creamy and crunchy and best of all, easy to make. Placing homemade coleslaw on top of a sandwich takes you to the pinnacle of sandwich Nirvana.

How to assemble BBQ chicken sandwiches

Now it’s time to assemble these BBQ Chicken Sandwich with coleslaw.

Top the baked bottom half of the sandwich with BBQ sauce of your choice. Add the coleslaw. Now the bacon. Finally, more BBQ Sauce.

Lasagna French Bread

Just a few ingredients turn ordinary loaves of French bread into this wonderful lasagna/pizza bread hybrid. Lots of sauce, lots of cheese and so toasty on top. Everyone will love this Lasagna French Bread.

Growing up french bread pizzas from the freezer section were one of mine & my brothers favorites! Now that I’m the cook in the house I skip the freezer section and make my own French bread right at home.

What beer pairs well with Lasagna French Bread and a movie?

The beer: Lager from Simpler Times.

We pick this beer up at Trader Joe’s. It tastes great and is a great value at less than $5 for a 6-pack.

Is Trader Joe’s a great place to buy beer?

Yes! Not only do they have a great selection of beers, they also let you taste anything you want before buying.

For this Mitten Movie Night we are starting Harry Potter from the very beginning. We are heading to Florida in a few weeks and visiting Universal Studios while there.

This will be Little A’s first time going when he can actually enjoy everything there. He wasn’t even 2 the last time we went so I’m excited to get him into the movies so he will understand just how cool that part of the park is.

How to make Lasagna French Bread:

In a pan brown the ground beef until cooked through, drain the grease.

To the same pan add onions and garlic. There should be grease still in the pan, if not add a small amount of olive oil. Lightly brown then add the ground beef back to the pan. Now add the spaghetti sauce and cook until warmed through and all mixed together.

Cut the French bread loaves in half and removing some of the bread in the center.

Tips for making great french bread:

  • Removing some of the bread in the center makes a
    shallow area for adding the cottage cheese fillings. Makes it so much easier to eat!
  • Brush some melted butter and garlic on the bread to give it a ‘garlic bread’ feel.

 Boiled potatoes and fried cabbage come together to form a great side dish or main ingredient in this Bubble & Squeak.  Round out the meal with ham steaks, fried eggs and Hollandaise Sauce on the top.

Binge watching cooking shows on the weekend paid off big time.  I mean look how good this recipe that was made on Food Paradise!  The Chef made a classic dish, Bubble and Squeak, then added ham, eggs and one of my favorites…Hollandaise Sauce.

For this classic dish, it’s a basic combination of cabbage and potatoes.  I made this in two pots-a larger pot then a deep skillet.

How to make Bubble & Squeak:

Clean, peel and chop potatoes then add to water.  Boil for 20 minutes until tender then drain.

Tips for making Bubble & Squeak:

  • Previously, I chopped the cabbage for this recipe but felt like it was too chunky to form good patties.  I updated the recipe and shredded the cabbage in the food processor. 
  • When forming the patties I let them chill in the freezer to firm them up, a step I didn’t do last time – even if you put them in the freezer for 10 minutes they will work much better for frying.

You will only need half of this, I made some coleslaw with the remaining half, yum!

To a food processor add the cabbage, onion and garlic and pulse until they are in small pieces.

Soften 1 Tbs butter in the pan the potatoes were cooked in.  To the pot that the potatoes were cooked in sautee the cabbage mixture for 4-5 minutes.

Add the potatoes back into the pan plus the milk, butter, salt and pepper to taste, and parsley flakes.  Using a potato masher smash everything together.

Steps for making Bubble & Squeak

Take a cookie sheet and add parchment paper.  Scoop out 8 patties then put them into the freezer for up to an hour.  This step makes it SO MUCH EASIER to fry the patties. 

Once they have cooled set up the staging area.  In 3 separate containers crack 2 eggs, 1/2 cup flour with salt and pepper to taste then 1/2 cup breadcrumbs.

Bring 1/2 cup oil to frying to med/high heat for frying.  Take the patties, flip on both sides into the flour, then the egg, then the breadcrumbs.

Add to oil in the pan frying on each side for 4-5 minutes.  Crispy!!  Remove and add to a plate with a paper towel.

The Chef on the show served the patties with poached eggs, ham steaks and Hollandaise Sauce, the sauce is what sold me on making this for sure.  Eggs Benedict is what I order whenever I go out if it’s on the menu.  While I’ve tried to make the sauce many, many times at home with a 100% fail rate I quickly realized there was a better alternative.  The best part is it isn’t too buttery, cook the eggs I add or have a bitter lemon taste. Win!  That alternative is this—>

Prepare the sauce as recommended on the package.  Then all that’s left to do is to cook the eggs which can be fried or poached.  Heat the ham steaks.

Prepare on a plate and drizzle with the sauce.

Roasted Pepper Turkey Sandwich

This Roasted Pepper Turkey Sandwich is made with turkey, lots of cheese, sweet red peppers and crunchy ciabatta bread. Making sandwiches in the air fryer is going to become your new FAVORITE thing!

So many combinations of flavors from the meat and bread, to what vegetables and types of cheese to add and what sauce to slather on it.

My favorite though has to be one that is warm and has a nice and crunchy bread. So guess what I do to get that nice and toasty bread? Tip: I use my air fryer to make sandwiches!

What beer pairs well with turkey sandwiches made in the air fryer?

The beer: Blonde Ale from Green Flash Brewing

Blonde ales are by far my favorite style of beer. Slight citrus and the sweetness of honey this is a beer that pairs well with pretty much any sandwich craving I’m having.

How to make Roasted Pepper Turkey Sandwich in the air fryer:

Butter one side of two slices of ciabatta bread. Lay one piece butter side down in the bottom of the air fryer basket.

To the bread add half the cheese, half the red peppers.

All the stuff for a roasted pepper turkey sandwich set on a counter with half the sandwich in the bottom of an air fryer.

Layer the turkey on top.

Repeat the cheese, red peppers and the final piece of bread with the butter side up.

To the top of the bread sprinkle with garlic powder and Parmesan cheese.

Place the basket back into the air fryer and set at 350 degrees for 5 minutes.

After 5 minutes in the air fryer. Open the drawer and flip the sandwich. Cook an additional 2-3 minutes.

  2. To the bread add half the cheese, half the red peppers.
  3. Layer the turkey on top.
  4. Repeat the cheese, red peppers and the final piece of bread with the butter side up.
  5. To the top of the bread sprinkle with garlic powder and Parmesan cheese.
  6. Place the basket back into the air fryer and set at 350 degrees for 5 minutes.
  7. After 5 minutes in the air fryer. Open the drawer and flip the sandwich. Cook an additional 2-3 minutes.
  8. Cut the sandwich in half and serve. Enjoy!

Hacienda Torta Cubana

This copycat recipe for Hacienda Torta Cubana sandwich is made with homemade salsa bread stacked high with pulled pork, salty ham, cheese, and pickles. Add some Apricot Sriracha Sauce for some sweet heat!

Did you know that this weekend kicks off not only Cinco De Mayo but also the Kentucky Derby?  Double celebrations for this Mitten Movie Night.  Who is ready to party?  I know I am.  For this very special day, I made this copycat recipe that I really love from a very popular restaurant, Hacienda.

Really going out for this recipe I made the bread from scratch then piled this Hacienda torta Cubana high with slow-cooked pork, ham, cheese and a special spicy sauce to top it off.

What beer pairs well with a Torta Cubana?

The beer: Latitude 42 Brewing Company, Nectar of the Goddess.

I really love this beer it is fruity and perfect for the warmer weather. Complimenting the sweet and spicy topping on this sandwich and cut the salty taste of the pork and ham.

As I said in the intro, I made the bread for this sandwich from scratch.  This Salsa Bread was so good and I was pleased with how well it took off on the blog.

In fact, just two days it is now my #1 post on the blog.  If you do not want to make the bread from scratch any sandwich bun will work.

Need a use for leftover pulled pork?

Then this Hacienda torta Cubana is the perfect use for that.  When I recently made my Pulled Pork Mac and Cheese I got the pork on a great deal and cooked it all at once.  I used half for that recipe than the other half for this one.

How to make a Hacienda Torta Cubana:

Divide the pork and ham up and you will make each of these made-to-order in one pan.

To a pan add the pulled pork and ham.  Start to cook it over medium heat for 2-3 minutes.  Flip the meat.

Butter the bottoms of the bread with some butter then add to the pan butter side down.

Add cheese to the top of meat then cook for another 2-3 minutes until the bread is crispy and the cheese is melted.

Remove and stack the sandwich on a plate and then prepare the Apricot Sriracha Sauce.

Ingredients and steps to make a Hacienda Torta Cubana.

While the description for the sauce on this is ‘Spicy Chipotle’ I decided to use one of my favorite condiments, sriracha.

Mix together some Apricot Jelly and sriracha according to taste but use the general recipe below to what I use and adjust from there.

Assemble the sandwich with warm and toasted salsa bread.

Pile high with the pork, ham, and cheese.  Add the pickles and the sauce.  Top off this deliciousness with the last piece of bread.

Cream Cheese Slider Sandwiches #SundaySupper

Heading out to a picnic?  These slider sandwiches are always a winner. The sweetness of the roll mixed with savory cream cheese and deli meats can be rich but also addicting. Cream Cheese Slider Sandwiches are big on flavor and are perfect because they are very portable.

This week started 3 day work weeks for my husband.  Normally he already works 4-10 hour shifts so with enough saved up vacation time he took another day off every week until September.  Plenty of time to have fun in the pool and discover new places that we haven’t visited yet is on our agenda. This past week alone took Little A to his very first trip to SkyZone and a zoo that was truly amazing.

See the area that we live in is coined ‘ Michiana’.  On the border of Michigan and Indiana.  Head to Kalamazoo or to South Bend in equal time.  Plus we are about equally 2-1/2 hours from Detroit, Indianapolis, and Chicago.

No matter where we head off to whether it’s a park or a cookout these sandwiches are always a special treat to take. 

For these sliders, I use sweet Hawaiian rolls to make them.  The slider buns come in a package that can be used to get them where they are going without worrying about extra storage.

How to make Cream Cheese Slider Sandwiches:

First, let’s make the herbed cream cheese.  Take 1 block of cream cheese and make sure it’s softened.  Mix in garlic powder, oregano and parsley then stir to combine.

Cut the buns in half placing the bottom half back into the box that the rolls originally came in.

Spread half of the cream cheese on the buns.  Layer ham, sliced tomatoes then the turkey pastrami.

Taking the top half put the rest of the cream cheese on it then put on top.

After the cream cheese slider sandwiches have been assembled here is a great way to transport them to your favorite picnic location:

  • Use the packaging from the rolls.  Since they were made right in the paper tray now just cover with two pieces of plastic wrap and put back into the bag. 
  • Tie with the plastic tie.
  • Place the sandwiches at the top of your cooler so they don’t get flattened.
