When I first got on IG I started something I hashtagged #MittenMovieNight.  Usually, Friday nights hubby & I enjoy a few craft beers and watch a movie.  I snapped what we are drinking and watching and tag it with this hashtag.  I look forward to this fun little night and I also look forward to sharing it.  So I thought, hey why not add a recipe to go along with it.  YEAH!  Dinner, Movie, Craft Beer!  So that is how #MittenMovieNight was born.

What should I drink with a Marinated Portobello Mushroom Burger?

The beer: Boom Boom Betty from Three Blondes Brewing

Blondes are my favorite type of beer. Subtle with a nice fruity flavor and everyone I try is different from the other. But what I do know is that I will never go wrong. It’s delicious.

How to make Portobello Mushroom Burgers in the oven:

Start with the Basil Mayonnaise.  In a food processor combine basil, garlic, and salt.  While running add oil through the top and blend until smooth.

Take the ingredients from the processor and move to another bowl.  Add the rest of the ingredients and stir until combined.  Cover and refrigerate.  This will keep for around 3 days.  *Pro-tip: Basil mayo is also great on sandwiches!

Next, mix the marinade ingredients together for mushrooms.  Oil, vinegar, salt and lemon juice.  Set aside.

Prepare the mushrooms by removing the stems and scraping the gills out. Don’t miss this step since leaving the gills in the mushroom can make them release more water, therefore, making them soggy.

Place mushrooms in a dish and pour the marinade over them.  Let it sit in the marinade at room temperature for 10 minutes.

While the mushrooms marinate, chop peppers and onion.

Add 2 Tbs. of butter in a pan, let it melt over medium/high heat then add the peppers and onions to the pan.  Sautee for 5 minutes.

Assemble the marinated mushrooms on a greased baking pan.  With mushroom cup side up add onions and peppers.  Top with mozzarella cheese.

Bake at 425 degrees for 20-22 minutes.

In the last 5 minutes of cooking the mushrooms, I put butter on my split rolls and put them in the oven as well to crisp up the buns.

Smear the rolls of your choosing with pesto mayo.  Add mushroom burger.  And here you are…..

Oh, hello spicy. Nice to see you. There was a time that I didn’t hold such an affinity for you, and that makes me sad. Thankfully I am back to your side. Especially after enjoying a big plate of pasta, creamy sauce, crunchy peppers, and so much spicy goodness. This recipe for Cajun Chicken Pasta is ready to put the spice back into life.

What beer pairs well with Cajun Pasta with Chicken?

The beer: Amber from Abita.

With spicy you don’t want overwhelming. Spicy chicken plus spicy sauce PLUS carbs…you want something that isn’t trying to fight with all the goodness of this dish so a pale ale like an amber is the perfect compliment.

What TV series pairs well with a spicy pasta dish?

Since in our house anything featuring Danny McBride cannot be missed, Righteous Gemstones is where it’s at this Mitten Movie Night. What a wild ride this show it. Funny but still with LOTS of WTF moments.

How to make Cajun Chicken Pasta:

I REALLY think that the key to this easy pasta recipe is the blackened chicken. Sprinkle the chicken with lots of Cajun seasoning then cooking it until crispy on the outside but juicy on the outside. That is what makes it meld so perfectly with this creamy pasta.

To achieve blackened chicken perfection it’s all about coating, frying, then taking it off at just the right moment. See the below example: I hate to brag, but yeah, that’s how you do it.

First, cut the chicken breasts in half. I try to cut mine to about 2-3 inches in the middle, no more. I want these to cook quick and stay juicy. The thicker they are, the longer they take to cook.

Sprinkle each side with 1 Tbs Cajun Seasoning.

To a shallow rimmed pan add oil. Let the pan heat up then place the chicken in the pan. Cook 4-5 minutes then flip. Cook 4-5 additional minutes depending on the thickness of the cut. *Make a cut in the thickest part of the chicken breast to make sure that it has cooked through. If not, return to the pan and cook 1-2 minutes per side.

While the chicken is cooking, add the fettucini to a pot and boil according to package directions. Drain and reserve 1/4 cup of the pasta water for the sauce.

Next, chop the red and green peppers, onions and mince the garlic.

Once the chicken has cooked, remove and place on a cutting board. Slice the chicken.

In the same pan that you cooked the chicken, leaving the heat on medium, add 1 Tbs butter and let melt. Once the butter is melted add the sliced peppers, onions, and garlic and sautee. Cook for 5 minutes to soften but allowing them to still stay crunchy.

Add the flour, stirring the ingredients together, then slowly add 1/4 cup reserved water* from the fettucini. *I have found that using the pasta water when making a cream sauce stretches the sauce out without making it clumpy.

Next, add the heavy cream, Parmesan cheese, and 1 Tbs Cajun seasoning.

Finally to the pan, add the drained cooked pasta. Top with the reserved green onions and jalapenos.

Shrimp and Corn Chowder

Dig into the comforting bowl of Shrimp & Corn Chowder. Thick and full of shrimp, crunchy corn, potatoes, and a creamy broth. The perfect comfort food soup.

Well, it’s still REALLY cold here. The beginning of the week was brutal and now it’s about to start a weekend of storms and high winds. This though I can easily get over because Spring is going to come eventually. Until then, I have this beautiful soup and tonight’s Mitten Movie Night to keep me warm.

What movie pairs well with cold weather and warm soup?

If you have Hulu you have to watch Down.  This movie was a real nail biter! Suspense fans will love it.

What beer pairs well with Shrimp & Corn Chowder?

The beer: The Poet from New Holland Brewing.

Creamy and light this is the perfect pairing with the flavors in this chowder.

This whole meal will leave you satisfied but not weighed down and napping on the couch before the movie even starts.

The best part of this soup is that it’s easy to make. As always, I use frozen already cooked shrimp. This may not be popular but it’s one of my top convenience items.

How else can you use frozen precooked shrimp?

How to make Shrimp & Corn Chowder:

Start by thawing the shrimp in warm water.

Next, wash and cube the potatoes, red peppers, onions and mince the garlic.

Ingredients to make Shrimp & Corn Chowder laid out on a counter ready to make it.

Once the vegetables have been chopped and the shrimp thawed add 2 Tbs to a large stockpot.

Now add the chopped vegetables, garlic, and thawed shrimp. Sautee the vegetables for 2 minutes.

Add the flour then stir it all together. Now add the corn, vegetable broth, and seasoning. Let simmer for 25 minutes.

Items for Shrimp and Corn Chowder chopped up and in a pot.

During the last 10 minutes take a small bowl and mix together the milk and flour. This will thicken up the chowder. Now add the Parmesan cheese. Pour into the soup and let finish cooking.

Sprinkle with more Parmesan and shrimp if you like. Serve with crackers. And here you are……

This week officially marked two months in our new home!  So we are celebrating this Mitten Movie Night feeling like we are finally settled in.  I made one of my favorite categories of food: the ‘sandwich‘.  Topped with saucy goodness and peppers this Smoked Sausage Sandwich is a well-deserved reward for a job well done.

The beer: 400 Divine Rabbits from a local favorite Greenbush Brewing Co.

Greenbush is a great stop if you hit the beach or the casino in New Buffalo.

Then finishing up Orange Is The New Black.  I have spent many nights since last Friday binge watching it. What shows are your favorites?  I will need a new one once this is over.

How do I find an amazing realtor team in Southwestern Michigan?

I would love to take the opportunity to give a little shout out of people that helped us along the way.  Since my blog is called ‘Bottom Left of the Mitten’ I thought it was a good platform to showcase who made buying a home in this area such a treat.

Realtor:  ‘Power of 2’ Team from Cressy & Everett in Dowagiac.  We actually looked at homes a few years ago and she walked us through any and everyone we wanted to look at.  We just didn’t find ‘the one’ at the time.  Called her up when we found this house to show it to us.  Three weeks and one day later not only did we have this house but we also sold ours and 4 acres of land.

Inspector:  Gary from Lake Michigan Inspections. I cannot recommend this gentleman and his father enough.  They walked us through everything, I mean everything, for our new house.  Living in town we were new to sewer and well. Same for a gas fireplace and even fixed a cap on the wood burning fireplace.

New Air Conditioner: Rohdy’s—Awesome job!  Right before our recent heatwave, they worked us in for a quote and then installed the unit.  Thanks to them we have stayed comfortable and cool.

How to make Smoked Sausage Sandwiches:

Chop up the peppers, onions and mince the garlic.  To a bowl add the balsamic vinegar, sugar and olive oil then mix to combine.

Sautee over medium/high heat for 7-10 minutes. I love when the peppers are ‘burnt’ a little so I got a little closer to the 10-minute mark.

Our new appliances were purchased in the recent store closing for HH Gregg.  This Frigidaire stove has a center griddle that I’ve been using non-stop.  No worries if you don’t have a griddle you can use a regular frying pan.

Butter buns and place them split side down.  Cut the sausage in 4 parts then split down the middle placing that split side down as well.

Heat the sausage through for around 3 minutes.

Flip both the bun and the sausage then cook around 3 minutes again.

Heating up the spaghetti sauce and assembling the sandwich is all that’s left to do.  I heated it up in the microwave for 1 minute. 

Place bun on a plate, add split smoked sausage, layer on the veggies then top with sauce.

Let’s start off  Mitten Movie Night with a meal combo that hits the spot no matter the weather, soup & grilled cheese.

What TV show pairs well with soup & sandwiches?

Mitten Movie Night was moved this week from Friday when it usually is to tonight.  We saved it because it’s a big TV night at our house.  It’s The Walking Dead season finale.  Are you a fan?  I found last season kind of bland but this season has certainly made up for it minus the first episode.

What beer pairs well with Tomato & Roasted Red Pepper Soup with Pimento Grilled Cheese?

The beer: Guinness Golden Ale.

Now enough about zombies and on to the food!

'Tomato & Roasted Red Pepper Soup with Pimento Grilled Cheese | Bottom Left of the Mitten

This soup is so easy!  The thing that I love most about vegetable soups is that you can mix them up and then make them creamy with a little thing called an ‘immersion blender’.  I recently used it to make an amazing Asparagus Soup for another Sunday Supper.  I was trying to recreate a favorite of mine and it turned out perfect!

How to make Tomato & Roasted Red Pepper Soup:

This soup is just a 4 step process: 1) Chop up the vegetables.

2) Mix these together in 2 Tbs oil.

3) Place on a baking sheet then roast them in a 350-degree oven for 40 minutes.

4) Once they are roasted add to a large stockpot with minced garlic, puree, chicken/vegetable stock, and sugar.

Set to low/medium heat while you make up the grilled cheese.

For the grilled cheese you could use any kind of bread.  This sandwich is made with English Muffin Bread that Little A and I made.  He loves to help me in the kitchen so I am always looking for things to bake because it’s something that I would like to get better at as well.

How to make Pimento Grilled Cheese:

Mix the mayo, cheese, and pimento in a bowl.

Slice and spread butter on the bread.

Add the pimento mixture in between bread then cook as with any good grilled cheese-3 minutes, flip, then 3 more minutes until the middle is completely melted.

This sandwich is perfect for dipping.

After your grilled cheese is nice and toasty and the soup is nice and roasty your ready.

Pepper Steak Pizza

Who’s ready for Mitten Movie Night?  I know I am, it’s been a long week.  So let’s kick it off on a positive note and I’ll say a 4 letter word that makes probably 95% of people just feel better: P-I-Z-Z-A.  Pepper Steak Pizza to be exact. Tonight we’re watching Mike & Dave Need Wedding Dates.  I love Adam Devine. Then enjoying some Stone Brewing Ruination Double IPA 2.0.  Lots of hoppy goodness!

Whenever I think of pizza I think of the movie Can’t Buy Me Love.  Patrick Dempsey on the first day as the ‘popular kid’ spent the day probably not as he had imagined. When he finally gets out of school he and the girl of his dreams go to a pizza joint.  Pizza arrives and he picks it up, looks at it and exclaims that it’s hot but it looks good and he is so hungry.  About to take that first bite someone comes from behind and takes his piece and then the whole pan.  I guess the point of this is this poor guy had a terrible day and all he wanted was to take some comfort in a piece of pizza.  My thoughts are that pizza is ‘comforting’ food rather than ‘comfort’ food.  Had a long hard week?  Order a pizza and watch a movie~relax.  Have a great day with big accomplishments?  Stay home and make a pizza together and celebrate.  Haven’t seen your friends in awhile?  Meet at a great pizza place (I highly recommend Silver Beach Pizza in Saint Joseph, MI) and catch up.  Ok, enough already with the pizza nostalgia!  Let’s actually make it!

The crust for this is so easy and you do not need to let it rise.  Add water, yeast and honey to a bowl.  Set aside and let bubbles form on the top-usually takes around 10 minutes. This means the yeast is working. Stir in four and salt to combine into a ball.  Place ball on a well floured surface then roll with rolling pin to desired size.  I did not let this rise since I wanted a thinner style crust.  Place on pizza pan.

On the steak I used a trick that my brother taught me.  Take about 2 Tbs of softened butter and 2-3 cloves of minced garlic and smash it together.  Slather over both sides of the steak then let it sit for about 20 minutes.  While it’s sitting heat an oven proof pan in the oven at 400 degrees.  Cut the steak into strips then remove the pan from the oven.  The pan will be so hot that it will start browning the steak even though the stove top heat is not on.  Brown on all sides then put back into over for about 5 minutes to get done cooking.  So good! One of the best cooking tips I’ve ever gotten.

Now all that needs to be done is put all the sauce ingredients into a sauce pan and bring to a boil and let thicken.  Usually within 3-5 minutes it will be ready.  Sautee peppers and onion in 1/2 tsp butter.  Assemble pizza: Sauce, steak (make sure the liquid has been drained if there is any to avoid soggy crust), peppers & onions, cheese and chopped tomatoes.

Pepper Steak Pizza
Tender steak and sauteed peppers & onions on top of a thin crust. Perfectly paired with a soy based sauce and melted cheese. A unique way to enjoy a takeout favorite.

Instructions
Thin Crust
  1. Add water, yeast and honey to a bowl. Set aside and let bubbles form on the top-usually takes around 10 minutes. This means the yeast is working.
  2. Stir in four and salt to combine into a ball. Please ball on a well floured surface then roll with rolling pin to desired size and place on pizza pan. Do not allow to rise.

  1. Combine all sauce ingredients into a small pot. Cook on medium heat until thickened completely.
  2. Assemble pizza: Sauce, steak (make sure the liquid has been drained if there is any to avoid soggy crust), peppers & onions, cheese and chopped tomatoes.
  3. Place in a preheated 375 degree oven for 20-22 minutes. Cut it up into 8 pieces. Enjoy!
