This BBQ Chicken & Bacon Sandwich recipe has all my favorite things in it!
Sliced chicken piled high with bacon and crunchy homemade coleslaw then drizzled with BBQ sauce.

I often profess my love for sandwiches. There are so many sandwich combinations you can make that it would really be hard to tire of them. Summer is also a great time to have sandwich fixings on hand for quick lunches or dinners in between trips to the lake or pool.

What craft beer pairs well with BBQ Chicken & Bacon Sandwiches:

The beer: Floridian Hefeweizen from Funky Buddha.

I fell in LOVE with this one while we were down in Florida on vacation. It’s a light drinkable beer that’s full of citrus notes and is similar to the blonde styles that I love so much.

What should I watch on TV while eating a sandwich?

Of course, this Mitten Movie Night HAS to be all about binging Stranger Things. While I didn’t make an Indiana Themed menu as I did for Season One, this chicken sandwich is tasty no matter where you live.

How to make BBQ Chicken & Bacon Sandwiches:

Preheat the oven to 375 degrees.

This recipe uses already cooked chicken breasts. Cooking up a few in the crock-pot then shredding is a quick meal must!

On a sheet pan split 6 brioche hamburger buns in half. Butter the tops and place face down on one half of the pan. Place the bottom half on the plan and spread the shredded cheese evenly between the 6 bottom sides.

How to prepare chicken sandwiches for baking.

Top with the precooked shredded chicken, splitting the chicken evenly over the bottoms.

Place in the oven and bake 12 minutes.

Cook the bacon to the desired doneness then remove and drain on a paper towel covered plate.

Quick Coleslaw Recipe:

In a small bowl combine the coleslaw mixture, mayonnaise, vinegar, mustard and sugar.

Making it up to a half hour early and placing in the refrigerator makes sure all the flavors meld together beautifully.

Coleslaw makes for a great BBQ chicken sandwich topping. It’s creamy and crunchy and best of all, easy to make. Placing homemade coleslaw on top of a sandwich takes you to pinnacle sandwich Nirvana.

How to assemble BBQ chicken sandwiches

Now it’s time to assemble these BBQ Chicken Sandwich with coleslaw.

Top the baked bottom half of the sandwich with BBQ sauce of your choice. Add the coleslaw. Now the bacon. Finally, more BBQ Sauce.

Bacon Wrapped Hot Dog

Do you love hot dogs? How about bacon? Now, how about garlic aioli? Let’s put those all together to make this Bacon Wrapped Hot Dog. Crack open a cold beer and dive into a different way to eat hot dogs.

Warmer weather just calls for some good hamburger and hot dog recipes! This specific recipe has been one that I’ve wanted to recreate at home for a while. While we were at a picnic through our local energy co-op there was a gourmet hot dog truck there and this was the one that I chose.

I picked it because: 1) It had bacon on it! 2) There was a sauce on it that sounded amazing, garlic aioli. My interest was peaked and I am glad that I chose this one, amazing.

Now that I’ve made this recipe at home, I will definently be adding it to my hot dog rotation for sure!

What beer pairs well with Bacon Wrapped Hot Dogs with Garlic Aioli?

The beer: Woody Wheat Ale from Austin Brothers Beer Company.

For this Mitten Movie Night I’m finishing up Santa Clarita Diet. I am so sad to hear that this show that I LOVE has been cancelled. So long Sheila, so long Gary.

How to make a Bacon Wrapped Hot Dog:

Wrapping bacon on hot dogs is so simple! Start by preheating the oven to 375 degrees.

Wrap a baking sheet with tin foil. This will make clean up so much easier!

Start by taking a piece of bacon at the top of a hot dog. Wrap the bacon going down around the hot dog. Place on the baking sheet and continue until they are all wrapped.

Bake in the oven for 12-18 minutes. The quickness of these getting done depending on your oven temperature.

Take the bacon and put under the broiler for 40-50 seconds.

Take them out and turn, put under the broiler again for another 40-50 seconds to crisp the other side.

Steam some buns and add the hot dogs to them. Now they are ready for topping!

How to make Garlic Aioli:

In a small bowl mix together the mayo, garlic cloves, 1 tsp lemon juice, salt and pepper.

To top off the hot dog I slathered garlic aioli on top, sprinkled Monterey Jack cheese, green onions, and jalapenos.

Roast Beef Sandwich

Say goodbye to boring pieces of bread with uninspiring meats on them!  This Roast Beef Sandwich has tender roast beef, bacon, onions and mushrooms loaded on top of a soft loaf of Italian bread.  Don’t forget the chunky blue cheese spread!

Well, it’s official. This Mitten Movie Night marks 1 month until….my birthday! In honor of the downward slide and creeping closer to the middle of 40, I figured I would treat myself to one of my favorite food groups-sandwiches.  There is nothing better than a BIG sandwich that you can sink your teeth into and just enjoy. The best thing about sandwiches is that almost anything goes and that goes for this roast beef sandwich that’s anything but average.

When I was thinking of what type of sandwich to make I decided to make it like a big sub sandwich.  Growing up, my mom would make sub sandwiches in the summer and it was always a special treat.  While I was at it I thought some bacon would be really good with this too.  Then finally, let’s slather a blue cheese sauce on it.

What movie pairs well with a roast beef sandwich and beer?

For the movie recommendation, I HIGHLY suggest Father of the Year. Who doesn’t love Adam Sandler movies?  David Spade returns to a little bit of Joe Dirt character which made this movie too funny! So now on to the roast beef sandwich recipe.

What beer pairs well with a roast beef sandwich?

The beer: Pooltime Ale from Bell’s Brewing.

The beefy concoction will pair perfectly with this refreshing summer brew.  This beer is slightly tart from the cherries which make a perfect contrast to all the beef and tangy blue cheese in this.  I may even say that I hit this combination out of the park!

How to make this Roast Beef Sandwich:

First, start by cooking the bacon.  I like bacon very crisp so I cooked it for about 6 minutes then turn and cook for an additional 6-8 minutes.

Take the loaf of bread and cut it in half.  Spread with butter and place face down on a cookie sheet.

Put into a preheated 350-degree oven and let it toast up for about 5-8 minutes.

Once the bacon is done remove it from the pan and put on a plate with paper towels to allow it to drain.  Remove all the grease in the pan from the bacon reserving about 1-2 tsp.

Add 1 Tbs of butter to that (this is not very diet friendly if you can’t tell) then add the sliced mushrooms and onions.

Let those cook down for about 5 minutes.  Then add the roast beef.

While those cook flip the bread over and spread the cheese equally on each side.  Put back into the oven and let the cheese melt, around 5 minutes.

Make the sauce by mixing the blue cheese, mayonnaise and horseradish sauce together.

Crumble the bacon and add to the cooked roast beef.  Take the bread out of the oven then pile it high onto one side of the bread then top off with the other.

Cut into 6 pieces then serve.  Let others add lettuce, tomatoes, and the blue cheese mixture as they like.

These tacos have double the taco goodness! A hard taco shell filled with spicy beef wrapped with a flour tortilla then spread with refried beans.  Finish it off by sprinkling with cheese and bake. Top with crunchy lettuce, tomatoes, and sour cream.

What beer pairs well with Double Deluxe Tacos?

The beer: Chicka Chicka Yeah from Odd Side Ales.

For the start of June, I’m living for these fruity, lemon, citrus and bright beers. Nothing heavy just delicious and makes me think of sitting on a beach, getting a tan then taking a nap in the middle of the afternoon.

Chicka Chicka Yeah is the perfect beer for just that.  Similar to my favorite beer, Dirty Blonde, but different enough to feel like it’s not a repeat.

What TV show pairs well with tacos?

Then for this Mitten Movie Night, Unbreakable Kimmy Schmidt is back so we must binge!! Sadly this is the first half of the last season of this adorable show.  If your a fan of The Office, Parks & Recreation or 30 Rock I think you will love this show too.

How to make Double Deluxe Tacos:

Start by browning the pound of ground hamburger.  Cook through until no longer pink, around 8-10 minutes.  Drain the grease from the pan.

To the beef add the water, beef base, tomato bouillon, cumin, and chili powder.  Cook medium heat until the bouillon has dissolved and the sauce is reduced which just takes about 4 minutes.

Preheat the oven to 375 degrees and great an 8″x11″ pan the set up the assembly line.  With a knife spread the refried beans over the flour tortilla shells.  Place a hard shell in the center of the flour tortilla then add some the beef to the middle of that. Place the finished taco in the pan and repeat until all 6 of them are done.  I found that 6 was the perfect amount for the beans and meat ratio.

What should I do with those extra taco shells then?

I always like to have tortillas on hand since my 4 yr old loves cheesy roll-ups.  Just add cheese and some chili powder then microwave for 20 seconds and lunch is served.  With a side of fruit, it’s perfect for busy days.

Once all the tacos are assembled top them off with cheese then put them into the oven to bake for 15 minutes.

Chop up some lettuce, tomatoes and any other toppings you like.  Open up some sour cream to top off these double deluxe tacos.

This Mitten Movie Night is the first in July!  Did you have a good 4th?  Last week instead of Mitten Movie Night I posted my Best BBQ Sauce recipe for #CookoutWeek.  It was an honor to be a part of it.

Tonight I am making a chicken and sausage etouffee recipe that I watched Tyler Florence make on The Food Network years ago when I was just getting into cooking.  It sounded great so I made it and have been loving it ever since.

What beer pairs well with Etouffee?

The beer: Bell’s Oberon.

What movie is great to pair with spicy food and craft beer?

We are watching What We Do In The Shadows.  It came on Netflix and we started watching a little of it then decided to save it for tonight.  What I did see was hilarious and I don’t think you can go wrong with a ‘documentary’ about Vampires living together.  That’s my kind of humor.

If I described this dish in one word it would be ‘simple’.  However, using that word would lead you to believe that the flavor is pretty basic too-nope. Wrong.  If you’re looking for an easy meal with lots of flavors this is it.

How to make Chicken & Sausage Etouffee:

Start by chopping the chicken into pieces.  Sautee in a pan with a 2 teaspoons of the oil for about 5 minutes.

Chop the sausage then add to the pan.  Cook for another 5 minutes until the chicken is cooked through and sausage is crisp.

While the meat is cooking take the pepper, onion, garlic cloves and celery and add to a food processor.  Chop items until they are small and well combined.

Remove the cooked chicken and sausage from the pan.

To the same pan add chicken stock and the processed vegetables.  Start cooking over medium/high heat.

Add the chicken and sausage back to the pot.  Let the stock reduce by half until it makes a smooth sauce.

This week officially marked two months in our new home!  So we are celebrating this Mitten Movie Night feeling like we are finally settled in.  I made one of my favorite categories of food: the ‘sandwich‘.  Topped with saucy goodness and peppers this Smoked Sausage Sandwich is a well-deserved reward for a job well done.

How do I find an amazing realtor team in Southwestern Michigan?

I would love to take the opportunity to give a little shout out of people that helped us along the way.  Since my blog is called ‘Bottom Left of the Mitten’ I thought it was a good platform to showcase who made buying a home in this area such a treat.

Realtor:  ‘Power of 2’ Team from Cressy & Everett in Dowagiac.  We actually looked at homes a few years ago and she walked us through any and everyone we wanted to look at.  We just didn’t find ‘the one’ at the time.  Called her up when we found this house to show it to us.  Three weeks and one day later not only did we have this house but we also sold ours and 4 acres of land.

Inspector:  Gary from Lake Michigan Inspections. I cannot recommend this gentleman and his father enough.  They walked us through everything, I mean everything, for our new house.  Living in town we were new to sewer and well. Same for a gas fireplace and even fixed a cap on the wood burning fireplace.

New Air Conditioner: Rohdy’s—Awesome job!  Right before our recent heatwave, they worked us in for a quote and then installed the unit.  Thanks to them we have stayed comfortable and cool.

How to make Smoked Sausage Sandwiches:

Chop up the peppers, onions and mince the garlic.  To a bowl add the balsamic vinegar, sugar and olive oil then mix to combine.

Sautee over medium/high heat for 7-10 minutes. I love when the peppers are ‘burnt’ a little so I got a little closer to the 10-minute mark.

Our new appliances were purchased in the recent store closing for HH Gregg.  This Frigidaire stove has a center griddle that I’ve been using non-stop.  No worries if you don’t have a griddle you can use a regular frying pan.

Butter buns and place them split side down.  Cut the sausage in 4 parts then split down the middle placing that split side down as well.

Heat the sausage through for around 3 minutes.

Flip both the bun and the sausage then cook around 3 minutes again.

Heating up the spaghetti sauce and assembling the sandwich is all that’s left to do.  I heated it up in the microwave for 1 minute. 

Place bun on a plate, add split smoked sausage, layer on the veggies then top with sauce.
