Looking for a simple pizza recipe that isn’t simple on flavor?  Dilled Brussels Sprouts Pizza has a creamy garlic sauce, lots of cheese and is topped with dilled vegetables.  Perfect for when you are looking for a slice of something different.

I’ve been seeing pickle pizza all over social media lately.  So when I got these great jars of ready-to-serve vegetables from Paisley Farm, I knew I had to try my own take on dill pizza!

This pizza turned out so good!  It would make a great holiday party appetizer, a snack while watching Christmas movies or a great addition to a New Year’s Eve pizza buffet.

When I made this I decided to go with a nice, light garlic sauce.  It worked out to perfection!

If you are interested in trying a different Paisley Farm vegetable and sauce combination might I recommend these pairings:

  • Red tomato sauce, Hot Brussels Sprouts, and mozzarella cheese.
  • An Asian inspired sauce (get the recipe here), Asian Bean Salad, and cheddar cheese.

How to make Dilled Brussels Sprouts Pizza:

Preheat the oven to 375 degrees and prepare the pizza crust according to package directions or your favorite pizza crust recipe.  (I’ve got a great one here.)

Next, I made the garlic sauce to go on top of the pizza crust.  In a small saucepan melt the butter over medium heat. 

Whisk in the minced garlic then sauté for 30 seconds.

To the butter, add the 1 Tbs flour a little at the time, constantly whisking the butter.

Finally, whisk in the milk to thin out the mixture then let thicken to a sauce.  Turn off the heat.

Top the prepared pizza crust with the sauce.  Add the cheese. 

Finally, slice the Dilled Brussels Sprouts and add to the top of the pizza and  sprinkle dill weed over the top of the pizza.

Bake the pizza for 18-20 minutes.  Slice into 8 slices.

Instructions

So long time, no see from me here in the bottom left of the mitten.  This is the first official Mitten Movie Night of fall because I haven’t celebrated one on the blog since the middle of July.  Like almost everyone the transition from summertime fun to school, sports, and general running around get you to here in October before you know it. So let’s get this movie night kicked off!

Tonight I am making a favorite, pizza.  HAWAIIAN PIZZA to be precise with lots of ham, red onion and THICK SLICES OF PINEAPPLE.  This combination of toppings are as intriguing as the type of beer I’m pairing it with.

What movie pairs well with pizza and beer?

I recommend I Think We’re Alone NowThis was a good movie (the end could have been a little more clear) but if you are a fan of apocalyptic genres then this one is for you.  Plus, Peter Dinklage is in it and I have a hard time passing on his movies. He’s is so good in everything from comedy to drama.

What beer pairs well with Hawaiian Pizza?

The beer: Spiteful Brewing, Working for the Weekend Double IPA.

I originally picked this up when we were visiting friends in Chicago.  The art on the can was amazing and my husband loves Double IPA’s, so I grabbed them up.

Are Double IPA’s hard to pair with food?

According to many of the websites that I frequent for food and beer pairings-yes.  The consensus is that it’s too heavy and ‘fights’ with the flavors in most foods.

While I am just starting to enjoy IPA’s my husband loves them.  After asking his opinion he disagreed and therefore I felt like I had a green light and he even gave me a suggestion of where to start, pizza.  Pizza goes with everything he said!  I am not disagreeing with that so off to the kitchen I went to make this simple Hawaiian Pizza that did indeed pair perfectly with this Double IPA from Spiteful Brewing.

How to make Hawaiian Pizza:

Forever with my trusty Jiffy pizza crust, I decided that a thick crust was my go-to.  For this pizza, I used 3 packages Jiffy pizza crust boxes plus 1-1/2 cup lukewarm water.  Add to a bowl and stir to combine until there are no chunks.

Steps on how to make a Hawaiian pizza.

Cover the bowl with a towel and let rise for 20-30 minutes.

Preheat oven to 350 degrees.

Using floured hands take the dough out of the bowl and spread the crust onto a 9-inch pie pan. Place the crust into the oven for 8-10 minutes.  Since the crust is a great way to make sure the middle is not raw.

Take out of the oven and cover with the pizza sauce.  Add the cheese, chopped ham, sliced red onions and whole slices of pineapple.  Place back into the oven and cook for 20 minutes.

Slice into eight pieces.

Tips & Variations for Hawaiian Pizza:

  • Once the crust has risen make sure to have flour nearby.  Using flour on hands and on top of the crust ensures that the dough doesn’t get too sticky.
  • Don’t skip the pre-cooking of the crust. It’s important so that you don’t have a cooked top but a raw center.
  • Prefer smaller bites of pineapple? Use pineapple chunks instead of slices.

Thick Crust Sausage Pizza

Even though it’s already the middle of January this is officially the first Mitten Movie Night of 2018.  I spent the holidays enjoying family and then the first part of the month just trying to get motivated.  Usually I hit the ground running once the holidays are over – so ready for the New Year that I take my tree down LITERALLY the day after Christmas.  This year thought with the holidays falling the way they did made for long weekends that called for being lazy and cooking some of my favorites, like this Thick Crust Sausage Pizza made with Michigan’s Own Jiffy Mix Pizza Crust.

I’ve decided in 2018 to do Mitten Movie Night a little differently.  Over the holidays my husband and I watched tons of movies.  We checked out a few YouTube trailer sites (think best Horror Movies of 2016, etc) and picked one nearly every night.  Many of them were ones that I hadn’t heard of or ones that looked just okay but never got a chance to see.  Some of them were so good that I couldn’t wait to share them so that is what I’ve decided to do for the foreseeable future.  Usually what I’ve been doing is talking about movies we plan on seeing that night.  I decided that really didn’t make much sense since how can I give an honest review if I haven’t seen them yet?  Think of this now as a movie review night + good food + great beer.

First up was one of my favorites from our movie nights.  Most people know Anne Hathawy as the Princess Diaries and a million other rom-com’s but in between she was also in this weird but interesting sci-fi/comedy, Colossal. I will say if you look this up online it didn’t get really great ratings and I don’t think it lasted long in theaters but if your looking for out of the box thinking, dark and brooding comedy then you will be in for a treat.  Thick Crust Sausage Pizza | Bottom Left of the Mitten

While dinner is cooking chill some Bell’s Two Hearted Ale.  If you love Bell’s beer don’t forget that right now is the yearly release of Hopslam.  My husband looks forward to it every year and I know he is now alone.  Now on to the pizza!

To start the pizza combine two boxes of Jiffy Pizza Crust with 1 cup warm water into a bowl.  Stir to combine until there are no clumps then place a towel over the bowl and let rise 10 minutes.  While the crust rises in a pan over medium high heat cook the sausage.  Breaking it up as it cooks into small bite size pieces.  Halfway through add chopped onions and the can of mushrooms.  I find when you use fresh mushrooms for this pizza they get soggy and make the sausage slimy.  Using canned mushrooms helped with this problem but if you do wish to use fresh cook them separate from the sausage and then add as a separate topping.  Cook sausage completely through then set aside until the dough has risen.

Preheat oven to 425 degrees and grease a 9″x13″ cookie sheet (make sure it has an edge to it).  Flour your hands a bit and take the dough out of the bowl and form to the sheet.  Push the dough all the way to the edge and then up the sides a bit.  Take prepared sauce and top crust with it pushing to all sides.  Top off with the sausage and mushrooms.  Then add the shredded cheese.

The last step I do when making this pizza is just for my preference but I really think that it make a delicious difference in the overall taste of this pizza.  Over the top of the cheese sprinkle 1/2 Tbs garlic powder then 1/2 Tbs Italian seasoning.  Put into the preheated oven and cook for 20 minutes.  Cut into 12 pieces and here you are…..

What movie pairs well with a saucy homemade pizza recipe and beer?

For this Mitten Movie Night we are watching The House.  This movie has TWO of my favorite actors, Will Ferrell and Amy Poehler.  While I’m a bigger fan of Ferrell’s earlier work (Anchorman, etc.) I cannot NOT watch a movie he is in.  No way, no how.

What beer pairs well with BBQ Pulled Pork Pizza?

The beer: Tasmanian Hatter from New Holland Brewing.

This IPA was made for rich BBQ sauce on top of tender pork and gooey cheese.

While I do like to make my own pizza crust sometimes when you have ingredients that are already fixed why not just go all in and grab a roll of pre-made crust from the store?  There is no reason so that is what I did.

How to make BBQ Pulled Pork Pizza:

Preheat the oven to 400 degrees.

On a pan put parchment paper and spray some non-stick olive oil on it. Lay out the crust then using a rolling pin roll it out so it reaches each edge.

Top the crust with BBQ Sauce.  For this I used my very own Best BBQ Sauce which is a vinegar/Memphis style.

Next layer the shredded Parmesan cheese, pulled pork, chopped red onions and then the shredded mozzarella.

Sprinkle with oregano to make it pretty.

Bake in the oven for 22 minutes until the edges are golden brown and the cheese is melted.

Slice it up into 15 pieces

How to make a BBQ Pulled Pork Pizza EVEN BETTER!

I happened to have a cup of bacon jam left over from my PB&J Burger so I put 4 heaping spoonfuls on top  of the mozzarella.  If you do not have bacon jam you could easily add crumbled bacon to the top for that extra level of smoky flavor.

Then just for fun, let’s dip it into some ranch!

Pepper Steak Pizza

Who’s ready for Mitten Movie Night?  I know I am, it’s been a long week.  So let’s kick it off on a positive note and I’ll say a 4 letter word that makes probably 95% of people just feel better: P-I-Z-Z-A.  Pepper Steak Pizza to be exact. Tonight we’re watching Mike & Dave Need Wedding Dates.  I love Adam Devine. Then enjoying some Stone Brewing Ruination Double IPA 2.0.  Lots of hoppy goodness!

Whenever I think of pizza I think of the movie Can’t Buy Me Love.  Patrick Dempsey on the first day as the ‘popular kid’ spent the day probably not as he had imagined. When he finally gets out of school he and the girl of his dreams go to a pizza joint.  Pizza arrives and he picks it up, looks at it and exclaims that it’s hot but it looks good and he is so hungry.  About to take that first bite someone comes from behind and takes his piece and then the whole pan.  I guess the point of this is this poor guy had a terrible day and all he wanted was to take some comfort in a piece of pizza.  My thoughts are that pizza is ‘comforting’ food rather than ‘comfort’ food.  Had a long hard week?  Order a pizza and watch a movie~relax.  Have a great day with big accomplishments?  Stay home and make a pizza together and celebrate.  Haven’t seen your friends in awhile?  Meet at a great pizza place (I highly recommend Silver Beach Pizza in Saint Joseph, MI) and catch up.  Ok, enough already with the pizza nostalgia!  Let’s actually make it!

Pepper Steak Pizza | Bottom Left of the Mitten

The crust for this is so easy and you do not need to let it rise.  Add water, yeast and honey to a bowl.  Set aside and let bubbles form on the top-usually takes around 10 minutes. This means the yeast is working. Stir in four and salt to combine into a ball.  Place ball on a well floured surface then roll with rolling pin to desired size.  I did not let this rise since I wanted a thinner style crust.  Place on pizza pan.

On the steak I used a trick that my brother taught me.  Take about 2 Tbs of softened butter and 2-3 cloves of minced garlic and smash it together.  Slather over both sides of the steak then let it sit for about 20 minutes.  While it’s sitting heat an oven proof pan in the oven at 400 degrees.  Cut the steak into strips then remove the pan from the oven.  The pan will be so hot that it will start browning the steak even though the stove top heat is not on.  Brown on all sides then put back into over for about 5 minutes to get done cooking.  So good! One of the best cooking tips I’ve ever gotten.

Now all that needs to be done is put all the sauce ingredients into a sauce pan and bring to a boil and let thicken.  Usually within 3-5 minutes it will be ready.  Sautee peppers and onion in 1/2 tsp butter.  Assemble pizza: Sauce, steak (make sure the liquid has been drained if there is any to avoid soggy crust), peppers & onions, cheese and chopped tomatoes.

Chicago Deep Dish Pizza #SundaySupper

Next time a craving for pizza takes over skip the local pizza place, forget the boxed cardboard frozen stuff and make your own!  Thick crust that is loaded with toppings, cheese and tomatoes.  Baked to gooey perfection.  Forget traditional crust and make this Chicago Deep Dish Pizza.

Where we live we are about 2 hours from many major cities.  That means we can stay home or go visit Indianapolis, Detroit, Toledo (their craft beer scene is awesome~I highly suggest giving it a try) or Chicago.  While we don’t hit Chicago very often we were able for a time to get real deep dish at a Gino’s East location that they had about a half hour from us in Granger, Indiana.  Sadly though it closed.  So it was up to make the thick pizza that I loved so much!  Other than the sausage that comes on an authentic Gino’s East, which is amazing, I think I pulled it off a pretty good copycat.

Chicago Deep Dish Pizza | Bottom Left of the Mitten

Start off with your crust.  This recipe is very similar to my White Chicken Pizza with Basil & Blackberry Sauce with the exception of reducing the flour and adding cornmeal to the dough.  It gives it that crunchy texture that most deep dish pizzas have.  Gather your ingredients….

Mix yeast, water & honey together.  Cover bowl with plastic wrap and let sit for 10 minutes.  You should see bubbles are formed on the top of the water/yeast mixture.  Now add the flour, honey & salt to the yeast mixture.  Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil.  Put a towel over the bowl and let rise for 15-20 minutes.

Once the dough has risen uncover and place on a floured surface.  Roll with a rolling pin to almost double the size of your pan so there is plenty to go around the deep edges of a greased springform pan.  Place the dough into the pan cinching edges as not to overlap over the top of the pan.  Brush crust with 2 Tbs. melted butter all over then place in a preheated 375 degree oven to bake for 8-10 minutes.  Take out of the oven and now it’s time to load it up!  Layer cheese, filling, more cheese then top with the drained tomatoes.  It’s very important that the tomatoes are drained because you don’t want the juice making your crust soggy.

Chicago Deep Dish Pizza from Bottom Left of the Mitten

My filling is a combination of Italian sausage, hamburger, mushrooms, green peppers, olives, onions, garlic cloves mixed with Italian seasonings and tomato paste.  I will put the full ingredients below but this is your pizza please add whatever you like!  A great crust, lots of cheese and the crushed tomatoes really are what make a deep dish what it is.  A blank slate to add whatever toppings you like.  Once all your layers are on place in your oven that is already preheated at 375 degrees.  And here you are….

Chicago Deep Dish Pizza
Next time a craving for pizza takes over skip the local pizza place, forget the boxed cardboard frozen stuff and make your own! Thick crust that is loaded with toppings, cheese and tomatoes. Baked to gooey perfection.

Instructions
Deep Dish Crust
  1. Mix yeast, water & honey together. Cover bowl with plastic wrap and let sit for 10 minutes. Add flour, honey & salt to the yeast mixture. Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil. Put a towel over the bowl and let rise for 15-20 minutes.
  2. Once the dough has risen uncover and place on a floured surface. Roll with a rolling pin to almost double the size of your pan so there is plenty to go around the deep edges of a greased springform pan. Place the dough into the pan cinching edges as not to overlap over the top of the pan. Brush crust with 2 Tbs. melted butter all over then place in a preheated 375 degree oven to bake for 8-10 minutes.
Sausage Filling
  1. Brown sausage and hamburger. Add onions, green peppers, olives, mushroom and garlic. Cook all together the meat is cooked through and the vegetables are soft.
  2. Add in tomato paste, Italian herbs and sugar. Take off heat. Add to pizza in a thick layer.
  3. Take crust out of oven. Load with layers like this: -1/2 Cheese -Filling -Remaining Cheese -Drained tomatoes
  4. Once all your layers are on place in your oven that is already preheated at 375 degrees.
  5. Cut into 8 pieces and enjoy!

It’s time for Mitten Movie Night!  I’m serving up a creamy, cheesy white chicken pizza with an added sweet twist on top and enjoying one of my favorite Michigan Craft Beers.  This pizza makes perfect use of summer grown basil, I know my plant is bursting.

Tonight I made White Chicken Pizza with Basil & Blackberry Sauce.  A sweet & savory combination on a homemade pizza crust.  While this has a long and fancy name trust me it didn’t take long at all.  Best of all it is delicious!  We are watching Joy.  Jennifer Lawrence kind of rocks, right?  And finally we are drinking Oberon from Bell’s Brewery.  If you are even remotely close to Kalamazoo, Michigan it is a must visit for any craft beer lover.  So gather your ingredients….

Start with the crust.  Mix yeast, water & honey together.  Cover bowl with plastic wrap and let sit for 10 minutes.  See photo below in the collage to make sure yours has the same consistency.  Now add the flour, honey & salt to the yeast mixture.  I do not have a fancy mixer (I want one so bad!) so I had to just hand mix this.  Start by stirring with a spatula then complete by hand.

Once it is all combined flip out of bowl onto a floured surface.  Cover with towel and let sit for 5 minutes.  Uncover and roll your dough out to the size of your pan.  Mine is pretty cool, it has holes in the bottom of it which makes the crust really crispy.  Once the dough is on the pan place in the oven at 450 degrees for 12-14 minutes.

While the pizza crust is doing it’s first bake through cut up 1/2 an onion and shred up your chicken if it isn’t already.  We get rotisserie chickens from Costco so I cut off about half the chicken to use.  In a pan heat up 1/2 Tbs butter, 1/2 Tbs olive oil and add your onions and chicken.  Saute until onions are soft (this will just heat your chicken up since it’s already cooked) around 5 minutes.

When the pizza crust has cooked for 12-14 minutes take it out of the oven and assemble the rest of the ingredients on the top of it.  Ricotta cheese, chicken & onions then the Italian Shredded cheese.  Place back into over for another 15 minutes.

About 5 minutes before your pizza is out of the oven add the blackberry preserves and 3 Tbs water to a small saucepan.  Bring to a boil letting the preserves breakdown to create a sauce. Once pizza is cooked right before serving sprinkle some chopped basil and blackberry sauce on top.  And here you are….
