Chicago Deep Dish Pizza #SundaySupper

Next time a craving for pizza takes over skip the local pizza place, forget the boxed cardboard frozen stuff and make your own!  Thick crust that is loaded with toppings, cheese and tomatoes.  Baked to gooey perfection.  Forget traditional crust and make this Chicago Deep Dish Pizza.

Where we live we are about 2 hours from many major cities.  That means we can stay home or go visit Indianapolis, Detroit, Toledo (their craft beer scene is awesome~I highly suggest giving it a try) or Chicago.  While we don’t hit Chicago very often we were able for a time to get real deep dish at a Gino’s East location that they had about a half hour from us in Granger, Indiana.  Sadly though it closed.  So it was up to make the thick pizza that I loved so much!  Other than the sausage that comes on an authentic Gino’s East, which is amazing, I think I pulled it off a pretty good copycat.

Start off with your crust.  This recipe is very similar to my White Chicken Pizza with Basil & Blackberry Sauce with the exception of reducing the flour and adding cornmeal to the dough.  It gives it that crunchy texture that most deep dish pizzas have.  Gather your ingredients….

Mix yeast, water & honey together.  Cover bowl with plastic wrap and let sit for 10 minutes.  You should see bubbles are formed on the top of the water/yeast mixture.  Now add the flour, honey & salt to the yeast mixture.  Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil.  Put a towel over the bowl and let rise for 15-20 minutes.

Once the dough has risen uncover and place on a floured surface.  Roll with a rolling pin to almost double the size of your pan so there is plenty to go around the deep edges of a greased springform pan.  Place the dough into the pan cinching edges as not to overlap over the top of the pan.  Brush crust with 2 Tbs. melted butter all over then place in a preheated 375 degree oven to bake for 8-10 minutes.  Take out of the oven and now it’s time to load it up!  Layer cheese, filling, more cheese then top with the drained tomatoes.  It’s very important that the tomatoes are drained because you don’t want the juice making your crust soggy.

My filling is a combination of Italian sausage, hamburger, mushrooms, green peppers, olives, onions, garlic cloves mixed with Italian seasonings and tomato paste.  I will put the full ingredients below but this is your pizza please add whatever you like!  A great crust, lots of cheese and the crushed tomatoes really are what make a deep dish what it is.  A blank slate to add whatever toppings you like.  Once all your layers are on place in your oven that is already preheated at 375 degrees.  And here you are….

Instructions
Deep Dish Crust
  1. Mix yeast, water & honey together. Cover bowl with plastic wrap and let sit for 10 minutes. Add flour, honey & salt to the yeast mixture. Stir with a spatula then complete by hand. After it has formed a ball cover with 2 tsp. of olive oil. Put a towel over the bowl and let rise for 15-20 minutes.
  2. Once the dough has risen uncover and place on a floured surface. Place the dough into the pan cinching edges as not to overlap over the top of the pan. Brush crust with 2 Tbs. melted butter all over then place in a preheated 375 degree oven to bake for 8-10 minutes.
Sausage Filling
  1. Brown sausage and hamburger. Add onions, green peppers, olives, mushroom and garlic. Cook all together the meat is cooked through and the vegetables are soft.
  2. Add in tomato paste, Italian herbs and sugar. Take off heat. Add to pizza in a thick layer.
  3. Take crust out of oven. Load with layers like this: -1/2 Cheese -Filling -Remaining Cheese -Drained tomatoes
  4. Once all your layers are on place in your oven that is already preheated at 375 degrees.
  5. Cut into 8 pieces and enjoy!

Turkey & Bacon Sliders with ‘Isn’t That Special’ Sauce #SundaySupper

Sliders have been a huge hit in my house since I started making them about a year ago.  In the summer they pair well with chips and other cold side dishes. In the winter they are perfect for dipping into soups.  They are also big on flavor when you hit the right combination.  I think I have a winner for you today for Sunday Supper, Turkey & Bacon Sliders with ‘Isn’t That Special’ Sauce.

Sure you can make these sliders just plain or maybe add some boring mayonnaise on it but why would you when you can add some ‘Isn’t That Special’ Sauce?  While this is similar to the pickle & vinegar based sauce we all know and love I really wanted to set mine apart with a unique name.  So I am paying homage to a show that I have loved since my early teen’s, Saturday Night Live.

You know that question, “Who are the 3 people you would invite to dinner?”  I could easily answer that and everyone at the table would be a former cast member of SNL.  I am a super Tina Fey Fan Girl.  Will Ferrell in my eyes is the hottest guy in Hollywood.  And Steve Martin is a genius. Who would you invite to dinner?

Alright, enough chit chat.  Let’s get cooking!.  Gather your ingredients….

Turkey & Bacon Sliders from Bottom Left of the Mitten

Cook your bacon according to package direction.  I just make mine right on my stove top but my friend swears by baking it in the oven.  Drain the bacon then set up a slider assembly.  Grease the bottom of a baking dish.  Add buns, turkey, bacon and cheese.  Top off with the bun.  In a microwave safe mug add 2 Tbs. butter and 1/2 tsp. garlic powder.  Melt butter in microwave.  Pour on top of the sliders.  Put sliders into a preheated 375 degree over for 15 minutes.

For the sauce.  Mix all the ingredients together in a bowl.  Done!  Pour over the sliders when they are served. Add tomatoes if you wish. And here you are…..

Easy Chicken & Dumplings #SundaySupper

This week officially was the start of sports season.  My son started football practice which means that except for a few weeks over the holidays my husband, who coaches most of his sports, and him are gone to practice at least 2 nights a week.  Then every Saturday is a game.  For football, soccer and basketball…until mid-March.  So that means I need to have quick meals ready before they are back out the door again.  One of my kids favorites is this Easy Chicken & Dumplings.  I can get this on the table and it’s a great way to make sure he’s got good wholesome fuel to power him through his practices.

The things I use for these are usually what I have on hand in my pantry and freezer.  Freezer you say?  Yes, freezer.  When I find carrots and celery on sale I will chop them up and put them in a plastic freezer bag and put them in the freezer.  It ensures that I always have these on hand for soups.  So gather your ingredients….

Easy Chicken & Dumplings from Bottom Left of the Mitten

For this recipe use any type of shredded chicken you desire.  I personally like to use chicken thighs that I cook in the crock pot with just salt and pepper then shred.  I used the whole large package and had enough leftover for chicken tacos later in the week.  Win! Of course though you can just as easily use leftover rotisserie chicken or cook a few chicken breasts on the stove.

Chop all your good veggies up.  Add to a large pot with your 2 Tbs. butter.  Saute for around 5 minutes to make onion and garlic soft.  Now add your stock and water.  (I use chicken bouillon versus chicken stock.  This is a preferred taste for me so feel free to use either.  When using chicken bouillon I usually heat water to boil and place cubes in that water to dissolve.  Then then just add the remaining water separate.  This is what you see in my Donald Duck cup.  From one of my favorite places ever, Disney World!)  Finally add your chicken.

Bring your pot to a good rolling boil for around 10 minutes.  Time to make your biscuits.  Add milk, oregano, thyme and the Jiffy mix.  Stir to combine.  Viola!  Done.  Easy as that!  Once pot is at a rolling boil you are going to drop your biscuit mix in one spoonful at a time on top of the broth and vegetables.  Drop all the way around filling up the top of the pot.

Keep the pot at a roiling boil for another 10 minutes.  This is the consistency you want.  The dumplings cooked completely through.

Michigan Hot Dog #SundaySupper

When I saw the theme for this weeks #SundaySupper ‘All American Burgers & Dogs’ I knew I wanted to make one of my families favorites, Chili Dogs.  But how do I set myself apart from all other Chili Dogs out there?  Delving into foodie research I came across the most perfect dish……the Michigan Dog.  A hot dog with chili that is named after my beloved home state?  Yes!

But I’ll be honest….I didn’t even know what a Michigan Dog was!  However I found this fabulous article, Hot Dog of the Week: Decoding the “Michigan Dog” of New York State by Serious Eats.  It set me straight.  Real straight.  You see the title?  That’s right, the Michigan Dog is a staple of NEW YORK!?!  However it originated in Michigan, be it almost 100 years ago, so I am staking claim and feel safe to celebrate this Chili Dog as one of Michigan’s own.

Now you’ll say ‘Erin. You didn’t even know what a Michigan Dog was. How are you going to even know if you did it right?’  For this I trusted my husband’s taste buds since he has had them so he was my guide to whether they were close or not {PS. They were!}.

I decided to go with a slight vinegar based sauce. I LOVE vinegar (my favorite BBQ sauce is vinegar based too) and in doing my research it said that the sauce could be vinegar based. Or may contain cabbage. Or water from the cleanest Lake in Michigan. Or secret saliva from a wolverine *Click here to see a cute photo of Little A looking at said Wolverines & follow us on IG while your there**.  You get the fact that I’m joking but finding a true original recipe was very hard so I improvised!  I also used Nathan’s Hot Dogs as an homage to New York.  Now let’s get started.

Prepare your hot dogs the usual way you would.  I steam mine in the rice cooker.  Now time to make the chili.  I added the beef, onions and all the spices right on the top.  When the burger cooked it set the spices right into the meat.  It’s my favorite way to cook beef.

Once the beef is cooked through add the tomato sauce, vinegar and ketchup to the pan.  Do not drain the beef.  Stir to combine.  Put a medium simmer for around 5 minutes.  It does not take long to thicken up.

Piña Colada Upside Down Cake #SundaySupper

Looking for a luscious dessert that tastes as good as it smells while baking?  With this Piña Colada Upside Down Cake you will feel like you have been transported to a tropical local.  Flip flops not required to enjoy.

This cake uses regular boxed cake mix but then it is given an ‘island vibe’ by using Coconut Crème Jell-O Pudding mix and pineapple juice instead of oil.  So gather your ingredients…..

I greased a square & circle 8″x8″ pan to make 2 cakes.  I wanted to send over the second one to my in-laws as a ‘Thank you’ for all the help they did on our new back deck.  Feel free to make this in one pan only using baking directions according to the type of boxed cake mix you use.

In the bottom of your greased pan pour the 1/2 cup of melted butter, dividing into each pan if your making 2 cakes.  Then add your brown sugar again dividing if making 2 cakes.  Place your cherries on top of the butter & brown sugar mix.

Drain your pineapple into another bowl so that you can make sure you reserve the liquid to use for the cake mix.  Now add the pineapple to the pans.  Then your shredded coconut.

Now it’s time for the cake mix.  Which is simple as adding your cake mix, Jell-O pudding, eggs, milk and reserved pineapple juice.  Mix with electric mixer until well combined, 3-5 minutes or so.  Pour batter over the top of your delicious pineapple & coconut.

Bake for 34 minutes at 350 degree or according to the directions on your cake mix for the type of dish you are using. Once cake has cooled slightly place a plate inverted on top of pan. Flip plate over. When pan is removed you should now have the pineapple & coconut mixture facing up. And here you are…..

Piña Colada Upside Down Cake
The smell of this Piña Colada Upside Down Cake baking will make your feel like you've been transported to the tropics. Flip flops not required to enjoy.
